Description

This lentil quinoa stew is a hearty and satisfying dish that is ideal for the cold season. It is easy to prepare and can be made ahead of time. The stew is vegan, rich in protein and fiber. With the Thermomix® the preparation is quick and easy. Perfect for a quick lunch or dinner.

Ingredients (12 ingredients)

  • 25 g uncooked lentils
  • 300 g tomato passata
  • 100 ml water
  • 50 g carrot
  • onions
  • 25 g uncooked quinoa
  • 10 g sunflower seeds
  • 0.5 TL salt
  • 4 TL chili powder
  • nach Geschmack pepper
  • 2 TL dried herbs
  • 1 TL olive oil

Preparation (7 steps)

Chop carrot

Thermomix® Setting

Peel 50g of carrot and cut into rough pieces. Place in the mixing bowl and chop for 3 sec./speed 5.

Chop onions (optional)

If desired, peel and halve the onions and place in the mixing bowl. Chop for 3 sec./speed 5. Add 1 tsp of olive oil and sauté for 3 min./120°C/speed 1.

Prepare lentils and tomato passata

Place 25g uncooked lentils, 100g tomato passata and 50ml water in the mixing bowl.

Simmer lentils

Close the mixing bowl and simmer the lentils for 10 min./100°C/speed 1.

Add remaining ingredients

Place 200g tomato passata, 50ml water, 25g uncooked quinoa, chopped carrots and optionally onions, 10g sunflower seeds, ½ tsp salt, 4 tsp chili powder, pepper and 2 tsp dried herbs in the mixing bowl.

Simmer stew

Close the mixing bowl and simmer the stew for 15 min./100°C/Reverse speed speed 1. If necessary, add additional tomato passata or water during the cooking process if the consistency becomes too thick.

Serve

Garnish the stew with olive oil and fresh herbs before serving.
