Description

This carrot-celery bolognese is a delicious and vegetarian alternative to the classic dish. The main ingredients are carrots, celery and tomatoes, which simmer in an aromatic sauce. The recipe is easy to prepare and takes about 45 minutes. It is ideal as a main course for 4 people and is a healthy and inexpensive option for everyday life.

Ingredients (13 ingredients)

  • 250 g Onions
  • 40 g Olive oil
  • 200 g Carrots
  • 200 g Celeriac
  • 20 g Tomato paste
  • 100 ml Red wine
  • 400 g Sieved tomatoes
  • 100 ml Vegetable broth
  • 1 TL Dried herbs (Italian mix)
  • 1 Stück Bay leaf
  • 1 Prise Sugar
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (7 steps)

Chop onions

Put 250 g onions in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 40 g olive oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop carrots and celery

Put 200 g carrots and 200 g celeriac in coarse pieces in the mixing bowl and chop for 5 sec./speed 5.

Add and roast tomato paste

3 min/248°F/Speed 1 248°F

Add 20 g tomato paste to the vegetables in the mixing bowl and roast for 3 min./120°C/speed 1.

Deglaze with wine

Thermomix® Setting
1 min/212°F/Speed 1 212°F

Add 100 ml red wine to the mixing bowl and let it reduce for 1 min./100°C/speed 1 without the measuring cup.

Add remaining ingredients and simmer

Add 400 g sieved tomatoes, 100 ml vegetable broth, 1 tsp dried herbs (Italian mix), 1 bay leaf, 1 pinch of sugar, salt and pepper to taste to the mixing bowl and simmer for 20 min./100°C/speed 1. Leave the measuring cup on.

Season and serve

Remove bay leaf. Season the carrot-celery bolognese with salt, pepper and, if necessary, a little sugar and serve with pasta of your choice.
