Description

I love preparing these fried chicken bites! The recipe is inspired by Japanese karaage, a real comfort food. The chicken, marinated in soy sauce and ginger, becomes very tender and flavorful. Frying makes it crispy and irresistible. Perfect as a tasty appetizer or as a second course accompanied by a fresh salad. The preparation is simple and quick, ideal for an informal dinner with friends or for a family lunch. A tip? Serve with lemon wedges for a touch of freshness!

Ingredients (13 ingredients)

  • 400 g boneless chicken thighs
  • 20 g soy sauce
  • 20 g white wine
  • 5 g sugar
  • 1 piece eggs
  • 5 g sesame oil
  • 50 g potato starch
  • garlic
  • fresh ginger
  • pepper
  • fine salt
  • seed oil
  • lemons

Preparation (6 steps)

Chicken in pieces

Cut the boneless chicken thighs into large, regular pieces. Transfer the chicken pieces to a large bowl.

Chicken marinade

Add to the bowl with the chicken: 20 g of soy sauce, 20 g of white wine, 5 g of sugar, 1 egg, 5 g of sesame oil, grated garlic, grated fresh ginger, pepper and fine salt to taste. Mix well with a spoon to combine all the ingredients.

Rest in the refrigerator

Cover the bowl with a lid or transparent film and leave to marinate in the refrigerator for at least 1 hour.

Addition of starch

After the marinating time, add 50 g of potato starch to the same bowl. Mix carefully, using the liquids from the marinade, until a thick batter is obtained.

Chicken frying

Heat plenty of seed oil in a saucepan or deep frying pan until it reaches 170-180 °C. Fry the chicken pieces for 6-7 minutes, turning them often until they are golden brown and crispy. This step is not performed in the Thermomix.

Draining and serving

Drain the chicken bites on absorbent paper to eliminate excess oil. Serve the hot karaage, accompanied by lemon wedges to squeeze directly onto the chicken pieces.
