Description

This comforting chicken noodle broth is a hug in a bowl! I've been making this recipe for years, especially when I need something warm and nourishing. It's incredibly easy to throw together, and the fresh ginger and soy sauce add a lovely depth of flavor. The broth is light yet satisfying, perfect for a chilly evening or when you're feeling under the weather. Feel free to add more vegetables like carrots or celery for extra nutrients. It's a great way to use up leftover chicken too!

Ingredients (9 ingredients)

  • 900 ml chicken stock
  • 1 piece boneless, skinless chicken breast
  • 1 tsp chopped fresh ginger
  • 1 clove garlic
  • 50 g rice
  • 2 tbsp sweetcorn
  • 2 piece mushrooms
  • 2 piece spring onions
  • 2 tsp soy sauce

Preparation (4 steps)

Prepare the broth

Thermomix® Setting
20 min/212°F/Speed 1 100

Pour 900ml chicken stock into the mixing bowl. Add 1 boneless, skinless chicken breast, 1 tsp chopped fresh ginger, and 1 garlic clove. Cook for 20 Min./100°C/Stufe 1.

Shred the chicken

Remove the chicken breast from the mixing bowl and shred it into bite-size pieces using two forks. Set aside.

Add remaining ingredients

4 min/212°F/Speed 1 100

Return the shredded chicken to the mixing bowl. Add 50g rice, 2 tbsp sweetcorn, 2-3 mushrooms (sliced), 2 spring onions (chopped), and 2 tsp soy sauce. Cook for 4 Min./100°C/Stufe 1.

Serve

Ladle the soup into two bowls and garnish with extra spring onion. Serve immediately.
