Description

These yeast dumplings are a real traditional dish! I got the recipe from my family and it is always a pleasure. The dumplings are wonderfully fluffy and go perfectly with hearty dishes such as goulash with lots of sauce. But they are also a poem when served sweet with sugar, cinnamon, apple sauce and vanilla sauce. The preparation is a bit more complex, but it's definitely worth it. Try it out and let yourself be surprised by the taste experience!

Ingredients (9 ingredients)

  • 300 g Wheat flour
  • 100 g Durum wheat semolina
  • 1 piece Egg
  • 10 g Salt
  • 100 ml Water, lukewarm
  • 100 ml Whole milk, lukewarm
  • 1 pinch Nutmeg
  • 7 g Dry yeast
  • 5 g Sugar

Preparation (7 steps)

Prepare pre-dough

Thermomix® Setting
2 min/99°F/Speed 2 37

Put 50 g wheat flour, 7 g dry yeast (or 20 g fresh yeast), 5 g sugar and 100 ml lukewarm water into the mixing bowl and mix for 2 min./37°C/speed 2. Let the pre-dough rest in the mixing bowl for 15 minutes.

Knead yeast dough

Thermomix® Setting
3 min/Kneading speed

Add the remaining 250 g wheat flour, 100 g durum wheat semolina, 1 egg, 10 g salt, 100 ml lukewarm whole milk and 1 pinch of nutmeg to the pre-dough in the mixing bowl. Knead for 3 min./kneading level to form a slightly sticky dough.

Let the dough rise

Remove the dough from the mixing bowl, place in a bowl, cover and leave to rise in a warm, draught-free place for 45 minutes.

Shape dumplings and let rise again

Form the dough into two to three oblong rolls (add a little flour if necessary) and leave them to rise again on a floured board or cloth for 15 minutes.

Prepare water

Fill a large pot with water, add 2 tsp salt and bring to a boil. The water must boil vigorously.

Cook dumplings

Carefully place the yeast dumplings in the boiling water, put the lid on and reduce the heat. Let the dumplings steep for 15 min./100°C/gentle stir setting. After 15 minutes, briefly remove the lid, turn the dumplings over and let them steep for another 15 min./100°C/gentle stir setting.

Prick and cut dumplings

After 30 minutes, remove the dumplings from the water and immediately prick them 3 - 4 times on both sides with a very pointed fork. Then cut into slices.
