Description

These chicken meatballs with chicory are a hearty main course that is ready in about 45 minutes. The recipe is designed for 2 servings and combines tender chicken meatballs with slightly bitter chicory and crisp carrots. Ideal for a protein-rich and healthy meal.

Ingredients (14 ingredients)

  • 300 g Chicken breast fillet
  • 1 Stück Spring onion
  • 4.5 EL Olive oil
  • 1 Stück Egg (size M)
  • 3 EL Tender oat flakes
  • nach Geschmack Salt, pepper from the mill
  • 2 Stück Chicory (approx. 400 g)
  • 250 g Carrots
  • 2 TL Liquid honey
  • 1 EL Butter
  • 1 EL Lemon juice
  • 125 ml Vegetable stock
  • 20 g Hazelnut kernels
  • 2 EL Chopped parsley

Preparation (10 steps)

Prepare chicken

Wash the chicken breast fillet, pat dry, cut into coarse pieces and mince or chop very finely. Clean the spring onion, wash and cut into fine rings.

Sauté spring onion

Put 1 spring onion and 1.5 tbsp olive oil in a pan and sauté briefly over medium heat.

Prepare meatball mixture

Put the prepared meat, the sautéed spring onion rings, 1 egg (size M), 3 tbsp tender oat flakes, salt and pepper from the mill into the mixing bowl and mix for 20 sec/speed 4.

Form meatballs

Form 6 small meatballs from the mixture with slightly moistened hands.

Prepare chicory and carrots

Clean the chicory, wash and quarter lengthwise, removing the stalk. Clean, peel and quarter the carrots lengthwise.

Sauté chicory and carrots

Heat 2 tbsp olive oil in a large pan, fry 250 g carrots and 2 chicory in it over medium heat for about 4 minutes until golden brown.

Finish cooking chicory and carrots

Add 2 tsp liquid honey, 1 tbsp butter, 1 tbsp lemon juice and 125 ml vegetable stock and pour in the stock. Cover everything and simmer over medium heat for 7 to 8 minutes, season with salt and pepper.

Fry meatballs

At the same time, heat the remaining oil in a pan. Fry the meatballs in it over medium heat for about 4 minutes on each side until light brown, then continue frying over low heat for 5 minutes. Turn occasionally.

Chop nuts

Roughly chop 20 g hazelnut kernels.

Arrange

Arrange the meatballs with the chicory and sprinkle with nuts and 2 tbsp chopped parsley. Rye sourdough bread (see page 66) or mashed potatoes go well with this.
