Description

Savory meatballs in caper sauce are a hearty main course made from beef and pork mince, refined with onions and bread rolls. With the Thermomix®, the meatballs can be made in about 45 minutes for 4 servings. The recipe is ideal for a festive family meal or lovers of hearty cuisine.

  • 250 g Ground beef
  • 250 g Ground pork
  • 1 Bread roll
  • 1 große Onion(s)
  • 2 Egg(s)
  • 2 EL Breadcrumbs
  • Salt
  • Pepper
  • Anchovy paste
  • 1 kl. Bund Parsley
  • 1 Liter Meat broth
  • Salt

  • 3 Allspice berries
  • 3 Peppercorns
  • 3 EL Margarine or butter
  • 2 EL Flour
  • 375 ml Broth
  • 1 kl. Glas Capers
  • 125 ml Cream
  • Lemon juice
  • Sugar
  • Salt
  • Pepper
  • 1 Egg yolk

Preparation (10 steps)

Chop onion (meatballs)

Put a large onion for the meatballs in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Prepare meatball dough

Put 250 g ground beef, 250 g ground pork, a soaked bread roll (squeezed out), the chopped onion, 2 eggs, 2 tbsp breadcrumbs, salt, pepper and some anchovy paste in the mixing bowl and mix for 2 min./speed 4.

Form meatballs

Form meatballs from the minced meat mixture with damp hands and set aside.

Prepare broth

Put 1 liter of clear meat broth, salt, a large onion (halved), 1 bay leaf, 3 allspice berries and 3 peppercorns in the mixing bowl.

Cook meatballs

Add the formed meatballs to the broth in the mixing bowl and cook for 20 min./100°C/reverse rotation speed 1.

Remove meatballs and collect broth

Carefully remove the meatballs from the mixing bowl and keep warm. Measure out 375 ml of the broth and set aside for the sauce. The remaining broth is no longer needed.

Prepare roux

Put 3 tbsp margarine or butter in the mixing bowl and melt for 3 min./100°C/speed 1. Add 2 tbsp flour and sauté for 2 min./100°C/speed 2.

Prepare sauce

Put 375 ml broth from cooking the meatballs, 1 small jar of capers (with juice), 125 ml cream, lemon juice, sugar, salt and pepper in the mixing bowl and cook for 5 min./90°C/speed 3.

Refine sauce

10 sec/Speed 3

Add 1 egg yolk to the mixing bowl and stir in for 10 sec./speed 3.

Arrange

Arrange the meatballs in the sauce and garnish with parsley.
