Description

This roasted root vegetable bowl with herb pistou is a vibrant and flavorful dish perfect for a hearty autumn meal. I love how the sweetness of the roasted vegetables complements the bright, herbaceous pistou. It's a simple yet satisfying recipe that's packed with nutrients and tastes amazing. The rose harissa adds a lovely warmth, while the lemon zest and juice in the pistou bring a refreshing zing. This dish is also great for meal prepping, as it keeps well in the fridge for a few days. Ingredients (9 ingredients)

  • 600 g leftover root veg
  • 1 tbsp rose harissa
  • 3 tbsp rapeseed oil
  • 150 g baby spinach
  • 0.5 bunch coriander
  • 0.5 bunch mint
  • 1 clove garlic
  • 30 g mixed nuts
  • 1 piece lemon

Preparation (5 steps)

Prepare and Roast Root Vegetables

Preheat the oven to 200°C (180°C fan). Slice the 600g leftover root vegetables (carrots, parsnips) into chunks. In a bowl, toss the vegetables with 1 tbsp rose harissa and 1/2 tbsp rapeseed oil. Season with salt and pepper. Spread the vegetables onto a baking tray and roast for 40 minutes. Add 150g baby spinach and 1 tbsp water to the baking tray and roast for a further 5 minutes until the spinach is wilted. Remove from the oven and set aside.

Prepare Herb Pistou

Add 2.5 tbsp rapeseed oil, 1/2 small bunch of coriander, 1/2 small bunch of mint, 1 small garlic clove, and 30g mixed nuts to the Thermomix bowl. Process for 20 Sec./Stufe 8 until smooth. If needed, add 1 tbsp water to help blend. Season with salt and pepper. Add the zest and juice of 1 lemon and mix for 5 Sec./Stufe 3.

Finalize Herb Pistou

Add the zest and juice of 1 lemon to the Thermomix bowl and mix for 5 Sec./Stufe 3.

Warm Lentils

Thermomix® Setting
3 min/140°F/Speed 1 60

Warm the lentils in the Thermomix bowl for 3 Min./60°C/Stufe 1. Add a few tablespoons of water if needed.

Combine and Serve

Toss the warmed lentils with the roasted root vegetables and spinach. Spoon into bowls and top with the herb pistou. Serve immediately.
