Description

These delicious sweet pretzels are perfect for a special breakfast or a Sunday brunch. The recipe is simple and the result is a soft and fragrant dough, enriched with orange zest and cinnamon. Preparing them at home is a real pleasure, and the aroma that spreads in the kitchen is simply irresistible. I love them warm, freshly baked, but they are also excellent at room temperature. The granulated sugar adds a crunchy touch that makes them even more delicious. Try them, you won't regret it!

  • Fresh brewer's yeast
  • 00 flour
  • Milk
  • Sugar
  • Fine salt
  • Orange zest
  • Egg yolk
  • Granulated sugar
  • Ground cinnamon

Dissolve the yeast

Dissolve the fresh brewer's yeast in a small amount of lukewarm milk. Pour into the bowl and mix for 20 Sec./Level 2.

Prepare the dough

Add the 00 flour, milk with the dissolved yeast, sugar, grated orange zest, soft butter and fine salt into the bowl. Knead for 3 Min./Kneading stage.

Dough rising

Transfer the dough to a bowl, cover with plastic wrap and let it rise in a warm place for about 2 hours, or until doubled in volume. Do not use the Thermomix for this step.

Shape the pretzels

After rising, deflate the dough and divide it into 10 equal parts (about 100g each). Roll each part into cords about 45 cm long. Shape into a U and cross the ends, pressing to make them stick. Do not use the Thermomix for this step.

Second rising

Place the pretzels on a baking sheet lined with baking paper and let them rise for about 30 minutes. Do not use the Thermomix for this step.

Brush and bake

Brush the pretzels with the beaten egg yolk, sprinkle with granulated sugar and ground cinnamon. Bake in a preheated static oven at 180°C for about 20 minutes. Do not use the Thermomix for this step.
