Description

This bread roll casserole with cherries is a delicious sweet dish made from stale bread rolls, pitted sour cherries, milk and eggs, prepared in the Thermomix®. The recipe is ideal for using up leftovers and is vegetarian. In just 45 minutes, including 20 minutes of work, a warm dessert for 4 servings is created. Perfect for the whole family or as a sweet reward.

Ingredients (12 ingredients)

  • 200 g Bread rolls, stale
  • 370 g Pitted sour cherries, drained weight
  • 300 ml Milk, warm
  • 2 Stück Eggs, size M
  • 50 g Butter, soft
  • 50 g Sugar
  • 1 Päckchen Vanilla sugar
  • 2 TL Baking powder
  • 1 EL Butter
  • nach Geschmack Breadcrumbs
  • Powdered sugar
  • Vanilla sauce, cold

Preparation (11 steps)

Preheat oven and drain cherries

Preheat the oven to 200°C top/bottom heat. Pour the pitted sour cherries into a sieve and drain. Take the butter out of the refrigerator in good time so that it becomes soft.

Cut bread rolls into small pieces

Cut the stale bread rolls into approx. 1 cm large pieces and place in a bowl.

Soak bread rolls in milk

Pour the warm milk over the bread roll pieces until it is completely absorbed.

Separate eggs and whisk egg whites until stiff

Separate the eggs. Add the egg white to the mixing bowl with the butterfly attachment and whisk until stiff for 3 min./speed 3.5. Transfer the egg white and set aside briefly.

Stir in butter, sugar and vanilla sugar

Add the soft butter, sugar and vanilla sugar to the mixing bowl and stir for 30 sec./speed 4.

Stir in egg yolks

Add the egg yolks and stir in for 15 sec./speed 3.

Add baking powder

Add the baking powder and stir in for 10 sec./speed 3.

Fold in bread rolls, cherries and egg whites

Thermomix® Setting
30 sec/Linkslauf Speed 2 Reverse

Add the soaked bread roll pieces, the drained cherries and the beaten egg whites to the mixing bowl and fold in for 30 sec./reverse rotation speed 2. If necessary, use the spatula to help.

Prepare baking dish and fill in dough

Grease a baking dish with butter and sprinkle with breadcrumbs. Pour the mixture into the prepared baking dish.

Baking

Bake the baking dish on the middle rack in the preheated oven for 30 minutes.

Serving

Dust the finished bread roll casserole with powdered sugar and serve with cold vanilla sauce.
