Description

These fluffy doughnuts with cranberry jam are a dream! I especially like to make them on weekends for brunch. The dough is a bit more elaborate, but the result is worth it. The slight acidity of the cranberries harmonizes perfectly with the sweet, fried dough. They are always a hit with me and are eaten up in no time. If you like, you can also sprinkle the doughnuts with powdered sugar. An absolute favorite recipe that I always enjoy preparing! The preparation time is a little longer, as the dough has to rise several times.

Ingredients (10 ingredients)

  • 500 g flour
  • 1 bicchiere milk
  • 30 g natural yeast
  • 0.5 tbsp sugar
  • 3 piece egg yolks
  • 50 g melted butter
  • 0.5 piece lemon zest
  • 2 bicchiere milk
  • frying fat
  • cranberry jam

Prepare yeast

1 glass of milk, 30 g of natural yeast and 1/2 tablespoon of sugar in the bowl and mix 2 Min./37°C/Speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

500 g of flour, the milk, yeast and sugar mixture, 3 egg yolks, 50 g of melted butter, the zest of 1/2 lemon and 2 glasses of milk in the bowl and knead 3 Min./kneading stage. If necessary, add a little milk. The mixture should be soft but not too liquid.

Let the dough rise

Place the dough in a bowl, cover and let rise in a warm place for about 1.5 hours, until doubled in size.

Portion the dough

Divide the dough on a floured work surface into equal pieces and form into small balls. Cover the balls with a cloth and let rise for another 30 minutes.

Shape doughnuts

Take each ball of dough in your hand and pull it into a circle, so that there is a thicker edge.

Fry doughnuts

Heat the frying fat in a pot. Fry the doughnuts in portions in the hot fat until golden brown. While frying, keep pouring hot fat over the doughnuts with a spoon so that they form a nice dome.

Fill doughnuts

Let the fried doughnuts cool on a plate, turn over and fill with cranberry jam. Sprinkle with powdered sugar.
