Description

These sardine fritters stuffed with mashed potatoes are an original and tasty way to enjoy this often shunned fish. I often prepare them for an aperitif, and they disappear in the blink of an eye! The mash, garnished with gherkins, garlic and spices, adds a touch of freshness and delicacy. Frying gives them an irresistible crispness. Feel free to vary the spices to your liking. A little Espelette pepper will pleasantly enhance the dish. These fritters are perfect for a cocktail party or an original starter. The preparation is quite quick, and the result is guaranteed!

Ingredients (12 ingredients)

  • 8 filets Sardine
  • 2 piece Potato
  • 2 c. à soupe Whites
  • 2 c. à café Cornstarch
  • 8 piece Gherkin(s)
  • 1 clove Garlic
  • Tomato sauce
  • Coriander
  • Cumin
  • Lemon juice
  • Salt
  • Pepper

Preparation (9 steps)

Preparation of sardines

Clean the sardine fillets and remove the central bone delicately. Reserve.

Chop the garlic and gherkins

Put 1 clove of garlic in the bowl and chop 3 Sec./Stage 7. Add 8 gherkins and chop 3 Sec./Stage 4. Transfer to another container and reserve.

Preparation of the mashed potatoes

Peel and cut 2 potatoes into pieces. Put the pieces of potatoes in the bowl. Add water until they are covered. Cook 20 Min./100°C/Stage 1.

Mashing

Drain the cooked potatoes. Put them back in the bowl and mash them 20 Sec./Stage 4.

Incorporating the ingredients into the mash

10 sec/Speed 3/Linkslauf Reverse

Add the chopped gherkins and garlic, tomato sauce (according to your taste), chopped fresh coriander and cumin (a pinch) to the mash. Mix 10 Sec./Stage 3/Reverse rotation.

Preparation of the fritter batter

In another container, mix 2 tablespoons of egg whites and 2 teaspoons of cornstarch until obtaining a homogeneous paste.

Garnishing the sardines

Take two sardine fillets and spread a portion of mashed potatoes between them. Repeat the operation for all the fillets.

Coating and frying

Dip each stuffed sardine in the fritter batter, making sure to cover it well. Heat a deep fryer. Fry the coated sardines for about 10 minutes, until they are golden brown.

Service

Remove the sardine fritters from the fryer and drain them on absorbent paper. Sprinkle with lemon juice before serving.
