Description

These gluten-free wind fritters are a crunchy delight on the outside and tender on the inside, perfect to enjoy at any time! The recipe is very simple and, with the Thermomix®, it is prepared in the blink of an eye. Ideal for a special snack or to surprise your guests with a different dessert suitable for coeliacs. The combination of sugar and cinnamon gives them an irresistible touch. Go ahead and prepare them and you will see how they disappear in an instant! They are especially good freshly made, but they can also be stored for the next day. A recipe that always triumphs!

Ingredients (11 ingredients)

  • 175 mililitros water
  • 25 gramos sugar
  • 50 gramos butter
  • 1 piece lemon
  • 1 pinch salt
  • 100 gramos rice flour
  • 25 gramos cornstarch
  • 3 piece eggs
  • 500 mililitros sunflower oil for frying
  • 50 gramos sugar for coating
  • 1 tsp cinnamon powder for coating

Preparation of the liquid base

Thermomix® Setting
7 min/212°F/Speed 2 100

In the Thermomix glass, add 175 ml of water, 25 g of sugar, a pinch of salt, the zest of 1 lemon and 50 g of butter in pieces. Program 7 Min./100°C/Stufe 2 so that the ingredients dissolve.

Incorporation of the flours

Thermomix® Setting
20 sec/Speed 4

Add 100 g of rice flour and 25 g of cornstarch to the glass. Program 20 Sek./Stufe 4. Make sure the dough comes off the walls of the glass.

Add the eggs

Thermomix® Setting
1 min/Speed 4

With the Thermomix turned off, wait a few minutes for the dough to cool slightly. Then, program Stufe 4 and add the eggs one by one through the lid, waiting a few seconds between each addition. Mix until well integrated. (Approximately 1 Min./Stufe 4 in total).

Fry the fritters

Heat 500 ml of sunflower oil in a frying pan over medium heat. With the help of two spoons, form small portions of dough and fry them in the hot oil until golden brown on all sides. Remove the fritters and place them on absorbent paper to remove excess oil.

Coat and serve

Mix 50 g of sugar with 1 tsp of cinnamon powder in a bowl. Pass the still hot fritters through the sugar and cinnamon mixture so that they are well covered. Serve immediately and enjoy.
