Description

These burgers are something special! The combination of juicy beef, sweet and sour balsamic shallots, spicy Pecorino and crispy Serrano ham is simply unbeatable. I like to make them when I have a little more time and want to impress my guests. Preparing the shallots takes a little time, but it's definitely worth the effort. Perfect for a cozy evening with friends or as a highlight at the next barbecue. A real treat!

Ingredients (13 ingredients)

  • 5 piece Shallot(s)
  • 1 TL, gehäuft Sugar, brown
  • 75 ml Balsamic vinegar
  • 2 piece Hamburger buns, freshly baked
  • 0.5 bunch Arugula, washed and spun dry
  • 400 g Ground beef, 20% fat, freshly ground
  • 50 g Pecorino, freshly grated
  • 4 Scheibe/n Serrano ham
  • Mayonnaise
  • Ketchup
  • Sunflower oil
  • Salt
  • Pepper

Preparation (7 steps)

Prepare shallots

Peel the shallots and cut into narrow rings.

Prepare balsamic shallots

Thermomix® Setting
3 min/248°F/Speed 1 120

Put the shallot rings in the mixing bowl and chop for 3 sec./speed 5. Add sunflower oil and sauté for 3 min./120°C/speed 1.

Caramelize and reduce

Thermomix® Setting
10 min/212°F/Speed 1 100

Add the brown sugar to the shallots and let it caramelize for 1 min./120°C/speed 1. Then add the balsamic vinegar and let it reduce for 10 min./100°C/speed 1 until the vinegar is syrupy. Remove the balsamic shallots from the mixing bowl and set aside.

Prepare burger

Cut open the hamburger buns and bake until crispy on the grill, in the toaster or in the oven as desired. Spread both sides with mayonnaise and ketchup as desired. Cover the bottom with arugula.

Shape and season ground meat

Halve the ground beef and use a burger press or your hands to form two patties. Season the patties with salt and pepper.

Grate Pecorino

Put the Pecorino in pieces in the mixing bowl and chop for 10 sec./speed 8. Transfer.

Top burger

Place the still hot patties on the arugula and spread the balsamic shallots over them. Top with the crispy ham and place the bun top on top.
