Description

These morning burritos with scrambled egg are a delicious and quick way to start the day. They have a creamy filling of scrambled egg with ham, tomato and onion, all wrapped in warm flour tortillas. Perfect for a hearty breakfast or brunch with friends. I often prepare them on weekends, and they are always a hit. You can add your favorite hot sauce for an extra touch of flavor. Go ahead and try them, you will love them! Also, they are very versatile, you can use the ingredients you like the most.

Ingredients (11 ingredients)

  • 8 piece flour tortillas for burritos
  • 6 piece eggs
  • 1 pinch salt
  • 1 pinch pepper
  • 8 slice turkey ham
  • 0.5 pieza onion
  • 1 pieza tomato
  • 1 tbsp vegetable oil
  • 2 piece avocado
  • 1 cup refried beans
  • 200 gramos cheese for gratin

Preparation (7 steps)

Chop the onion and tomato

Place the ½ piece of onion in quarters in the bowl and chop for 3 Sec./Stufe 5. Remove and reserve. Place the tomato in quarters in the bowl and chop for 3 Sec./Stufe 5. Remove and reserve.

Chop the ham

Thermomix® Setting
3 Seg./Speed 4

Place the 8 slices of turkey ham in the bowl and chop for 3 Sec./Stufe 4. Remove and reserve.

Beat the eggs

In a separate bowl, incorporate the 6 eggs, 1 pinch of salt and 1 pinch of pepper. Beat with a fork and reserve.

Cook the scrambled egg

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Pour 1 tablespoon of vegetable oil into the bowl. Add the chopped onion and tomato. Program 3 Min./120°C/Stufe 1. Add the chopped ham and the beaten eggs. Program 5 Min./90°C/Linkslauf Stufe 1. Stir with the spatula to ensure even cooking.

Heat the tortillas

Lightly heat the 8 flour tortillas in a pan or griddle to make them more flexible.

Assemble the burritos

Spread each tortilla with a portion of 1 cup of refried beans. Add a few slices of 2 avocados. Add a portion of scrambled egg and 200 grams of cheese for gratin. Roll the burritos tucking in the edges so that the filling does not come out.

Toast the burritos

Place the burritos in a hot pan or griddle and toast lightly on both sides until golden brown and the cheese has melted.
