Description

This homemade chicken broth is a true concentrate of flavors and benefits. I often prepare it in autumn and winter to warm up the evenings. The chicken meat, tender and flavorful, can be used in many preparations: salads, sandwiches, or simply enjoyed as is. This broth is perfect for people looking for a healthy and comforting diet. It is also ideal for holiday meals, such as Christmas or New Year's Eve. A simple, economical and flavorful dish, perfect for the whole family. Feel free to add some fresh herbs for even more flavor!

Ingredients (11 ingredients)

  • 400 g Onion
  • 0.1 g Clove
  • 300 g Leek
  • 200 g Carrot
  • 1.4 kg Celery
  • 1.4 kg Whole chicken
  • Bay leaf
  • 3 l Water
  • 2 g Peppercorn
  • 4 g Salt
  • Cheese

Preparation (6 steps)

Preparation of vegetables

Peel and cut the onions into quarters. Stick a quarter of onion with 3 cloves. Cut the leek into sections. Cut the carrots and celery stalks in half. Set aside.

Cooking the broth

Place the onions, leeks, carrots, celery, whole chicken (without giblets), bay leaves, peppercorns and salt in the Thermomix bowl. Add 3 l of water.

Close the bowl and cook 60 Min./100°C/Stufe 1.

Chicken recovery

Gently remove the chicken from the bowl. Bone it and let it cool for a few minutes. Store the meat in the refrigerator in a narrow container, covering it with a little broth.

Cooking the carcass

30 min/194°F/Speed 1 90

Check the seasoning of the broth. Put the chicken carcass back in the Thermomix bowl and cook 30 Min./90°C/Stufe 1.

Filtering the broth

Let the broth cool. Remove the vegetables and carcass. Filter the broth through a fine sieve using a cheesecloth. Pour into containers, cover and refrigerate.
