Description

This warming chicken consommé is a real home remedy that my grandmother used to prepare for colds. The long simmering of the soup chicken ensures a particularly strong broth, which is refined with fresh vegetables and parsley. The broth is not only soothing, but also rich in zinc and other important nutrients. Perfect for cold days or when you just feel like something hearty. If you like, you can add noodles or enjoy the broth pure. A real feel-good dish!

Ingredients (9 ingredients)

  • 1 piece Soup chicken
  • 800 g Chicken giblets
  • 1 bunch Carrot(s)
  • 1 piece Celeriac
  • 1 piece Kohlrabi
  • 2 piece Parsley root(s)
  • 1 bunch Parsley, smooth fresh
  • 1.5 Liter Water
  • 200 g Salt

Preparation (5 steps)

Prepare soup chicken

Thermomix® Setting
120 min/212°F/Speed 1 100

Add 1 soup chicken or 800 g chicken giblets and 1.5 liters water to the mixing bowl. Add 200 g salt and cook for 120 min./100°C/speed 1.

Prepare vegetables

Clean 1 bunch of carrots, 1 celeriac, 1 kohlrabi and 2 parsley roots and cut into bite-sized pieces.

Cook vegetables

Thermomix® Setting
30 min/212°F/Speed 1 100

Add the prepared vegetables to the mixing bowl and cook for another 30 min./100°C/speed 1 until they are firm to the bite.

Add meat

Remove the soup chicken from the mixing bowl and separate the meat from the bone. Put small pieces of meat back into the mixing bowl.

Season and serve soup

Season the soup with salt. Wash and chop 1 bunch of fresh, smooth parsley and sprinkle over the soup before serving. Optionally add separately cooked soup noodles.
