Description

Prepare a holiday duck with red cabbage and potato dumplings with the Thermomix®. This hearty main course with duck, red cabbage, carrots and onions is ideal for festive occasions in winter. The preparation takes a total of 160 minutes, with the active working time being around 90 minutes. The recipe is designed for 8 servings and is perfect as a family meal or for a festive Christmas dinner. With the Thermomix®, preparation is effortless.

  • 2 kg ready-to-cook duck
  • Salt
  • Pepper
  • 200 g Carrots
  • 3 Stück Onions
  • 1 kg Red cabbage
  • 2 EL Clarified butter
  • 3 Stück Juniper berries
  • 1 Stück Bay leaf
  • 200 ml dry Red wine
  • 8 EL Apple vinegar
  • 3 EL Sugar
  • 2 EL Orange marmalade
  • 0.5 TL Cinnamon
  • 4 EL Honey
  • 400 ml Duck stock
  • 2 EL Cornstarch
  • 1 Bd. Chives
  • 750 g Dumpling dough half and half
  • 4 Zweig(e) Thyme
  • 4 EL Fruit spread

Preparation (16 steps)

Prepare duck

Preheat the oven to 150°C circulating air. Wash the ready-to-cook duck (2 kg) and pat dry. Rub inside and outside with salt and pepper. Close the opening with wooden skewers and tie tightly with kitchen twine. Place the duck on a rack over the oven's drip pan.

Prepare vegetables

Peel carrots (200 g) and 2 onions and cut into coarse cubes. Spread the vegetables on the drip pan.

Sear duck

First roast the duck in the preheated oven for about 2 hours.

Chop onions

Thermomix® Setting

Peel 1 onion, halve and place in the mixing bowl. Chop 3 sec./level 5.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tbsp clarified butter and sauté 3 min./120°C/level 1.

Prepare red cabbage

Clean red cabbage (1 kg), quarter, cut out the stalk in a wedge shape and cut into fine strips.

Cook red cabbage

Thermomix® Setting
45 min/212°F/Speed 1 100 Reverse

Add red cabbage, juniper berries (3), bay leaf (1), dry red wine (200 ml) and apple vinegar (8 tbsp) and season with salt and sugar (3 tbsp). Bring red cabbage to the boil and simmer 45 min./100°C/level 1 reverse.

Prepare glaze

Mix orange marmalade (2 tbsp), cinnamon (0.5 tsp) and honey (4 tbsp).

Glaze duck

Brush the duck with the glaze and cook for another 8 minutes at 150°C until golden brown and crispy.

Prepare sauce

5 min/212°F/Speed 2 100

Lift the duck from the rack and keep warm. Pour the roasting juices from the drip pan through a sieve into a saucepan and degrease. Top up the roasting juices with duck stock (400 ml) and place in the mixing bowl. Mix 5 tbsp water with cornstarch (2 tbsp) and add to the mixing bowl. Cook 5 min./100°C/level 2.

Season sauce

Season the sauce with salt, pepper and sugar.

Prepare chives

Wash chives (1 bunch), shake dry and cut into fine rolls.

Shape dumplings

Knead dumpling dough half and half (750 g) with the chives and form 2-3 rolls with approx. 4 cm Ø. Cut rolls into approx. 1.5 cm thick slices.

Fry dumplings

Heat 1 tbsp clarified butter in a pan and fry the dumpling slices in portions from each side for approx. 2 minutes until golden brown.

Refine red cabbage

When the red cabbage is cooked, stir in fruit spread (4 tbsp) and season with salt, sugar and pepper.

Arrange

Wash thyme (4 sprigs) and shake dry. Carve the duck and arrange on plates with the red cabbage and dumplings. Garnish with the thyme and serve with the sauce.
