Description

These coconut snowcaps are a festive finger food dessert made in the Thermomix® with egg whites, sugar, and shredded coconut. Refined with yogurt and decorated with Candy Melts and sugar pearls, they are a highlight on any winter coffee table. Preparation takes about 45 minutes, with an active working time of 30 minutes. The recipe yields approximately 30 servings and is perfect for Christmas occasions and as a sweet treat for the whole family.

Ingredients (8 ingredients)

  • 4 Egg whites
  • 1 Prise(n) Salt
  • 200 g Sugar
  • 1 Pck. Vanilla sugar
  • 350 g Shredded coconut
  • 1 EL Yogurt
  • 100 g Red Candy Melts
  • 30 White sugar pearls

Preparation (7 steps)

Preheat oven and prepare baking sheet

Preheat the oven to 140 °C. Line a baking sheet with parchment paper and set aside.

Whisk egg whites until stiff

Insert the whisk attachment into the mixing bowl. Add 4 egg whites and 1 pinch of salt to the mixing bowl and whisk for 3 min./speed 3.5 until stiff.

Pour in sugar

While whisking, slowly pour 200 g sugar and 1 packet of vanilla sugar into the mixing bowl and whisk for another 2 min./speed 3.5 until the egg whites form glossy peaks.

Fold in shredded coconut and yogurt

Remove the whisk attachment. Add 350 g shredded coconut and 1 tbsp yogurt to the mixing bowl and carefully fold into the egg whites with the spatula. Be careful not to collapse the mixture.

Shape caps and bake

Form small caps from 1 tbsp of the mixture each and place on the prepared baking sheet. Bake in the preheated oven for 10-15 minutes, until the tips are lightly browned. Remove and let cool completely.

Melt Candy Melts

Add 100 g red Candy Melts to the mixing bowl and melt for 4 min./50°C/speed 2.

Decorate caps

Pour the melted Candy Melts into a bowl. Dip the cooled coconut meringue caps into it, leaving a small edge free. Let drain well and decorate with one white sugar pearl each. Let cool on a wire rack.
