Description

Caramelized almonds from the Thermomix® are a simple, vegetarian snack or a festive dessert, ideal for the Christmas season. The main ingredients are almonds, sugar, vanilla sugar and cinnamon. Preparation in the Thermomix® takes about 30 minutes and yields 4 servings. This recipe is perfect for anyone looking for a quick and tasty finger food for family or guests.   • 125 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 Stk. Vanilla bean
  • 1 TL Ground cinnamon
  • 200 g Almonds with skin
  • 250 ml Lukewarm water

Prepare sugar solution

Add 125 g sugar, 1 packet of vanilla sugar and 250 ml of lukewarm water to the mixing bowl and heat for 3 min./100°C/speed 2 until the sugar has dissolved.

Add vanilla and cinnamon

Cut 1 vanilla bean lengthwise and scrape out the pulp. Add the vanilla pulp and 1 tsp of ground cinnamon to the mixing bowl and stir in for 10 sec./speed 3.

Add almonds and cook

Thermomix® Setting
6 min/212°F/Linkslauf Speed 1 100 Reverse

Add 200 g of almonds with skin to the mixing bowl and stir in for 6 min./100°C/reverse rotation speed 1. Simmer the almonds in the sugar mixture until the liquid has evaporated.

Caramelize almonds

4 min/212°F/Linkslauf Speed 1 100 Reverse

Heat the almonds for another 4 min./100°C/reverse rotation speed 1 until the sugar layer melts slightly again and caramelizes.

Spread almonds and let cool

Place the caramelized almonds on a baking sheet lined with baking paper and separate them with a spoon. Allow the almonds to solidify completely.
