Description

This caramelized chicken with spices is a recipe that I often make at home. The combination of the sweetness of the caramel with the spicy touch of cumin, curry and onoto (achiote) creates a unique and delicious flavor.   • Boneless chicken
  • Butter
  • Sugar
  • Garlic
  • Cumin
  • Curry
  • Onoto

Preparation of the chicken

Season the boneless chicken with garlic, cumin, curry and onoto to taste. Make sure that all the pieces are well covered with the spices.

Preparation of the caramel

Thermomix® Setting
5 min/Varoma/Velocidad 2 Varoma

In the Thermomix bowl, place butter to taste and sugar to taste. Program 5 Min./Varoma/Speed 2 to create a light caramel. Watch that it does not burn and adjust the time if necessary.

Incorporation of the chicken

Pour the caramel into a large pan. Pass each piece of seasoned chicken through the caramel, making sure it is well impregnated.

Cooking the chicken

Cover the pan and cook over moderate heat for 20 minutes, or until the chicken is tender. Stir occasionally to prevent sticking.

Browning the chicken

Uncover the pan and let the chicken dry and brown on all sides, approximately 10 more minutes. Watch constantly to prevent burning.
