Description

These cheeseburger muffins are a hearty snack for parties or a brunch. The combination of juicy ground beef, savory bacon and melted cheddar in a fluffy dough coat makes them an irresistible finger food. With the Thermomix® the preparation is quick and easy. The muffins are ideal for those who love savory snacks and are looking for a delicious alternative to the classic burger.

Ingredients (15 ingredients)

  • 10 g fresh Yeast
  • 110 g lukewarm Water
  • 1 pinch Sugar
  • 200 g Flour
  • Salt
  • 1 tbsp Olive oil
  • 6 dried Tomatoes
  • 6 Gherkins
  • 2 Cherry tomatoes
  • 0.25 red Onion
  • 100 g Bacon
  • 400 g ground Beef
  • 2 tbsp Olive oil
  • Salt/Pepper
  • 50 g grated Cheddar

Preparation (8 steps)

Prepare yeast dough

Add 10 g fresh yeast, 110 g lukewarm water and 1 pinch of sugar to the mixing bowl and mix for 3 min./37°C/speed 3.

Knead dough

Thermomix® Setting
3 min/Kneading speed

Add 200 g flour, ½ tsp salt and 1 tbsp + some olive oil and knead for 3 min./kneading level. Place the dough in an oiled bowl and cover to rise for approx. 30 minutes until the volume of the dough has doubled. Rinse and dry the mixing bowl.

Chop dried tomatoes

For the filling, put 6 dried tomatoes in the mixing bowl, chop for 5 sec./speed 5 and pour out.

Prepare gherkins and onions

Cut 6 gherkins diagonally into strips. Peel ¼ red onion. Place the WunderSlicer V2 on the mixing bowl lid and use the fine blade to cut the onion into fine strips. Collect the sliced onions.

Cut cherry tomatoes

Cut 2 cherry tomatoes into slices.

Fry minced meat

Dice 100 g bacon and fry together with 400 g ground beef in 2 tbsp hot olive oil in a pan. Season with salt and pepper. Add 6 chopped dried tomatoes and mix in.

Preheat oven

Preheat oven to 200 °C (180 °C fan oven).

Shape and bake muffins

Roll out the dough thinly and cut out 12 circles with a bowl (12 cm diameter). Press circles into silicone muffin tins. Fill with minced meat mixture and sprinkle with 50 g grated cheddar. Bake in a hot oven for 12-15 minutes. Garnish with gherkins, onions and tomatoes and serve.
