Description

This cheesecake with meringue topping is a real eye-catcher and tastes simply heavenly! I always enjoy baking it because it is so juicy and creamy. The slightly sour curd harmonizes perfectly with the sweetness of the meringue. The preparation is a bit more complex, but the result is worth it. It tastes especially good when it has been refrigerated overnight. A perfect cake for special occasions or just for coffee!

Ingredients (16 ingredients)

  • 200 g Flour
  • 100 g Sugar
  • 70 g Butter
  • 1 piece Egg(s)
  • 1 tsp Baking powder
  • 500 g Low-fat quark
  • 150 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 Pck. Vanilla pudding powder
  • 1 piece Egg(s)
  • 2 piece Egg yolks
  • 250 ml Cream
  • 250 ml Milk
  • 150 ml Oil
  • 2 piece Egg white
  • 6 tbsp Icing sugar

Preparation (8 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 200 g flour, 100 g sugar, 70 g butter, 1 egg and 1 tsp baking powder into the mixing bowl and process into a dough for 2 min./kneading stage.

Prepare springform pan and fill in dough

Line the bottom of a 26 cm springform pan with baking paper and grease the edge. Roll out the dough and place in the springform pan. Press the edge up by hand approx. 3-4 cm.

Preheat oven

Preheat the oven to 175 °C top/bottom heat.

Prepare quark mixture

Thermomix® Setting
30 sec/Speed 4

Put 500 g low-fat quark, 150 g sugar, 1 pack vanilla sugar, 1 pack vanilla pudding powder, 1 egg, 2 egg yolks, 250 ml cream, 250 ml milk and 150 ml oil into the mixing bowl and stir for 30 sec./speed 4.

Pour in quark mixture and bake

Pour the quark mixture into the springform pan and bake in the preheated oven for 70 minutes.

Prepare meringue

Thermomix® Setting
3 min/Speed 3.5

In the meantime, put 2 egg whites with a small pinch of salt and the butterfly into the mixing bowl and whisk until stiff for 3 min./speed 3.5. Then add 6 tbsp icing sugar and stir for a further 30 sec./speed 3.5 until the mixture is glossy.

Spread meringue on cake and finish baking

After 70 minutes, take the cake out of the oven and spread the meringue approx. 1 cm thick on the topping. Bake the cake for another 10 minutes at 175 °C.

Let cool down

Let the cake cool down a little and carefully loosen the edge of the springform pan with a knife. Let the cake cool down on the bottom of the springform pan for several hours.
