Description

This cheesecake with juicy peach wedges is an absolute classic that I always enjoy baking! The combination of the crispy crumble base, the creamy curd cheese filling and the fruity peaches is simply unbeatable. It is perfect for Sunday coffee or as a delicious dessert for birthdays and other festive occasions. The preparation is a bit more complex, but the result is well worth it. It tastes particularly good when it is well chilled. A tip: If you like, you can add a few almond flakes over the crumbles.

Ingredients (11 ingredients)

  • 325 g Butter
  • 300 g Flour
  • 275 g Sugar
  • 2 Pck. Vanilla sugar
  • 1 piece grated zest of 1 untreated lemon
  • 2 piece Eggs (Gr. M)
  • 500 g Low-fat curd cheese
  • 1 tbsp Lemon juice
  • 1 Pck. Custard powder vanilla flavor (for 1/2 l milk)
  • 1 Dose(n) Peaches (850 ml)
  • 1 tbsp Icing sugar

Preparation (11 steps)

Melt butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Put 175 g butter in the mixing bowl and melt for 3 min./50°C/speed 2.

Prepare crumbles

Thermomix® Setting
20 sec/Speed 4

Add melted butter, 300 g flour, 150 g sugar and 1 packet of vanilla sugar to the mixing bowl and process into crumbles for 20 sec./speed 4. If necessary, use the spatula to help.

Prepare springform pan

Grease a springform pan (26 cm Ø) and sprinkle with desiccated coconut. Put 2/3 of the crumbles into the pan and press down to form a flat base. Put the pan in the fridge.

Prepare curd cheese cream

Put 150 g soft butter, 125 g sugar, 1 packet of vanilla sugar and the grated zest of 1 untreated lemon into the mixing bowl and stir until creamy for 3 min./speed 3.

Add eggs

Thermomix® Setting
15 sec/Speed 3

Add 2 eggs (Gr. M) one after the other and stir in for 15 sec./speed 3 each time.

Stir in curd cheese and lemon juice

Add 500 g low-fat curd cheese and 1 tbsp lemon juice and stir until smooth for 30 sec./speed 3.

Stir in custard powder

Thermomix® Setting
20 sec/Speed 3

Add 1 packet custard powder vanilla flavor (for 1/2 l milk) and stir in for 20 sec./speed 3.

Prepare peaches

Drain 1 can(s) (850 ml) of peaches and cut into wedges.

Top the cheesecake

Spread peach wedges on the crumble base. Pour the curd cheese cream on top and smooth it out. Sprinkle the remaining crumbles on top.

Bake cheesecake

Bake in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 50 minutes. Allow to cool in the switched-off oven with the oven door slightly open.

Decorate cheesecake

Dust the cooled cheesecake with 1 tbsp icing sugar.
