Description

This cherry cake with flaked almonds is a real treat! I especially like to bake it in the summer when the cherries are fresh from the market. The combination of the juicy dough, the fruity cherries and the roasted almonds is simply unbeatable. The use of diabetic sweetener also makes it suitable for diabetics. The cake can be prepared well and tastes wonderful even the next day. An absolute must for every coffee table!

Ingredients (10 ingredients)

  • 60 g soft butter or margarine
  • 36 g Diabetic sweetener
  • 1 pinch Salt
  • 0.5 Fläschchen Butter-vanilla flavor
  • 3 piece Eggs (size M)
  • 200 g Flour
  • 1 tsp Baking powder
  • 200 g Pitted sour cherries
  • 3 tbsp Flaked almonds
  • 25 g Sour cherry jam

Preparation (11 steps)

Prepare springform pan

Grease a small springform pan (20 cm Ø) with some butter and sprinkle with breadcrumbs. This prevents the cake from sticking.

Mix butter, sweetener and flavor

2 min/Speed 3

Put 60 g soft butter or margarine, 36 g diabetic sweetener, a pinch of salt and 1/4-1/2 bottle of butter-vanilla flavor into the mixing bowl and stir for 2 min./speed 3 until creamy.

Stir in eggs

Thermomix® Setting
20 sec/Speed 3

Add 3 eggs individually one after the other to the mixing bowl and stir in for 20 sec./speed 3 each time.

Mix flour and baking powder and stir in

Thermomix® Setting
30 sec/Speed 4

Mix 200 g flour and 1 tsp baking powder, sieve into the mixing bowl and stir in for 30 sec./speed 4.

Pour dough into the pan

Pour the dough into the prepared springform pan and spread evenly.

Distribute cherries

Spread 200 g pitted sour cherries on the dough and press down lightly.

Bake cake

Bake the cake in a preheated oven (electric oven: 175 °C/convection oven: 150 °C/gas: level 2) for 40-45 minutes. Since the oven does not belong to the Thermomix, no setting can be specified here.

Let the cake cool

Let the cake cool in the pan for about 10 minutes, then remove from the pan and let it cool completely on a wire rack.

Roast almonds

Roast 2-3 tbsp of flaked almonds in a pan without fat until golden brown. Since this is done in the pan, no Thermomix setting can be specified here.

Heat jam

Thermomix® Setting
1 min/122°F/Speed 1 50

Put 25 g sour cherry jam into the mixing bowl and heat for 1 min./50°C/speed 1, then strain through a sieve.

Decorate cake

Brush the edge of the cake with the warmed jam and press on the roasted almonds.
