Description

This recipe for chicken breast in balsamic tomato sauce is a real treat! The combination of sweet balsamic, sun-dried tomatoes and tender chicken is simply irresistible. I like to make it when I need something quick, but still want something special on the table. Preparation is very easy and the result is convincing every time. Rice or pasta goes particularly well with it. A great dish for the whole family that is also wonderfully filling. Be sure to try it!

Ingredients (10 ingredients)

  • 2 c. à s. cornstarch
  • Olive oil
  • Salt or fine salt
  • Pepper
  • 2 c. à s. sugar
  • 5 piece dried tomatoes
  • 4 piece chicken breasts
  • Chicken broth
  • 50 ml balsamic vinegar
  • 1 piece onion

Preparation (7 steps)

Chop onion

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5.

Sauté onion

Add some olive oil and sauté for 3 min./120°C/speed 1.

Fry chicken

Season the chicken breast fillets with salt and pepper. Fry in a pan with some olive oil on both sides until lightly browned. Remove from the pan and set aside.

Prepare balsamic sauce

Add 50 ml balsamic vinegar and some chicken broth to the mixing bowl and bring to the boil for 5 min./100°C/speed 2.

Add tomatoes and sugar

Thermomix® Setting
3 min/212°F/Speed 2 100

Add 5 sun-dried tomatoes in small pieces and 2 tablespoons of sugar and simmer for another 3 min./100°C/speed 2.

Add sauce thickener

Thermomix® Setting
2 min/212°F/Speed 3 100

Mix 2 tablespoons of cornstarch with some water and add to the mixing bowl. Stir in for 2 min./100°C/speed 3 until the sauce thickens.

Add chicken and cook

30 min/212°F/Linkslauf Speed 1 100 Reverse

Place the fried chicken breast fillets in the mixing bowl and cook for 30 min./100°C/reverse rotation speed 1. Make sure that the chicken breast fillets are covered with the sauce. Add some more chicken broth if necessary.
