Description

This chicken with simmered garlic is a comforting and tasty dish, perfect for autumn evenings or family meals. The tenderness of the chicken, combined with the richness of the garlic and the aroma of cognac, makes it an irresistible dish. I have been preparing this recipe for years, and it is always a hit at home. The paprika brings a slightly spicy touch that goes perfectly with the poultry stock. Do not hesitate to accompany it with steamed potatoes or a vegetable puree for a complete and balanced meal. A real delight easy to make!

Ingredients (9 ingredients)

  • 1 kg Chicken thighs
  • 8 clove Garlic
  • 60 ml Cognac
  • 125 ml Poultry stock
  • 1 c. à soupe Paprika
  • 1 Feuille(s) Bay leaf(ves)
  • 2 c. à soupe Flat parsley
  • 2 c. à soupe Olive oil
  • Salt, pepper

Preparation (8 steps)

Preparation of chicken and spices

Remove as much fat as possible from the chicken and cut the thighs into three pieces. Mix the salt, pepper and paprika in a bowl. Roll the chicken in the spices.

Chop the garlic

Put the 8 cloves of garlic in the bowl and chop for 3 Sek./Stufe 7.

Fry the garlic

Heat the olive oil in a large frying pan and fry the chopped garlic for 2 minutes. Remove and set aside.

Brown the chicken

Brown the chicken in the same pan for 5 minutes and bring all the chicken together in the pan.

Add the cognac and the stock

Add the cognac, let it boil for 30 seconds, stir in the poultry stock and the bay leaf.

Simmer the chicken

Reduce the heat, cover and simmer gently for 10 minutes.

Prepare the garlic and parsley paste

Meanwhile, recover the garlic pulp and crush it in a bowl with the parsley to make a kind of paste.

Final cooking

Stir the garlic and parsley paste into the chicken, cover and cook for another 10 minutes.
