Description

These chocolate orange crescent rolls, prepared in the Thermomix®, are the perfect Christmas dessert. The main ingredients are flour, butter, sugar, egg and orange zest. Preparation takes about 80 minutes and yields 30 servings. Ideal as a sweet breakfast, finger food or with coffee in the winter time.

  • 200 g Wheat flour Type 405
  • 60 g Cornstarch
  • 1 tsp Baking powder
  • 100 g Sugar
  • 1 Prise(n) Salt
  • 1 piece Egg (room temperature)
  • 1 Pck. Grated orange zest
  • 125 g Butter
  • 100 g Dark chocolate
  • Flour for the work surface
  • 1 Pck. Dark cake glaze

Mix dry ingredients

Put 200 g wheat flour type 405, 60 g cornstarch, 1 tsp baking powder, 100 g sugar and 1 pinch of salt into the mixing bowl and mix for 15 sec./speed 4.

Knead dough

Add 1 egg (room temperature), 1 pack of grated orange zest and 125 g butter in pieces and knead for 2 min./kneading stage to a smooth dough.

Chop and knead in chocolate

Thermomix® Setting
30 sec/Linkslauf/Speed 2 Reverse

Roughly chop 100 g dark chocolate. Add the chopped chocolate to the mixing bowl and knead into the dough for 30 sec./reverse/speed 2. If necessary, help with the spatula.

Chill dough

Form the dough into a ball, wrap in cling film and let it rest in the refrigerator for 30 minutes.

Preheat oven

Preheat the oven to 175°C top/bottom heat.

Form crescent rolls

Roll the dough into a thick strand on a lightly floured work surface. Cut off small portions (approx. 1-2 cm thick) with a knife and form them into crescent rolls with your hands.

Bake crescent rolls

Place the crescent rolls with a little space on a baking sheet lined with baking paper and bake in the preheated oven for approx. 8-12 minutes. Then let cool.

Melt and decorate the glaze

Melt the cake glaze in a water bath according to the package instructions and sprinkle on the chocolate orange crescent rolls.

My grandma always baked them, and the scent of orange and chocolate that spread throughout the house is one of my fondest childhood memories. This recipe is a tribute to her baking skills, adapted to the modern kitchen technology of the Thermomix®. The list of ingredients may seem simple at first glance, but each individual component plays an important role. Wheat flour type 405 forms the base, while the cornstarch ensures a delicate, crumbly texture that melts in your mouth. The baking powder gives the crescent rolls a slight looseness. The sugar contributes the sweetness, which is perfectly balanced by a pinch of salt. The egg, ideally at room temperature, binds the ingredients and gives the dough smoothness. The grated orange zest is the heart of the aroma - it brings a fruity, slightly bitter note that harmonizes wonderfully with the chocolate. The butter, cold and in pieces, ensures the shortbread-like quality of the dough. And of course the dark chocolate, which not only provides the chocolatey taste, but also an interesting texture when coarsely chopped and mixed into the dough. When preparing in the Thermomix®, it is important to observe the order of the ingredients. First mix the dry ingredients so that the baking powder is evenly distributed. Then add the wet ingredients and do not knead the dough for too long, otherwise it may become tough. Knead in the chopped chocolate only at the end so that it does not melt too much. If the dough is too sticky, you can dust it with a little flour before cooling. The cooling time is important so that the dough can relax and be processed better. When shaping the crescent rolls, make sure that they are not too thick, as they will rise a little in the oven. The baking time may vary depending on the oven, so it is important to keep an eye on the crescent rolls. They should be golden brown, but not too dark. If you want to try a vegan version, you can replace the butter with vegan margarine and the egg with an egg substitute (e.g. applesauce or flaxseed egg). For a gluten-free version, you can use gluten-free flour. Instead of orange zest, you can also use other spices such as cinnamon, cardamom or gingerbread spice. The chocolate orange crescent rolls are a treat on their own, but also go perfectly with a cup of coffee, tea or hot chocolate.
