Description

This Christmas Stollen is a traditional yeast pastry, especially popular during the Christmas season. Filled with raisins, candied lemon peel, candied orange peel, and almonds, it offers a rich taste. Preparation takes about 3 hours, including the resting time for the dough. The recipe makes one stollen and is ideal for festive occasions or as a sweet treat with coffee.

Ingredients (16 ingredients)

  • 400 g Flour
  • 100 g Almonds
  • 150 g Sugar
  • 1 Päckchen Vanilla sugar
  • 1 Prise Salt
  • 150 g Butter, soft
  • 1 Stück Egg
  • 1 Würfel Yeast
  • 1 TL Sugar
  • 100 ml Milk
  • 250 g Raisins
  • 50 g Candied lemon peel
  • 50 g Candied orange peel
  • 50 ml Rum
  • 50 g Butter, melted
  • Powdered sugar

Chop almonds

Place 100 g almonds in the mixing bowl and chop for 8 sec./speed 6. Transfer and set aside.

Prepare yeast

Put 100 ml milk, 1 cube of yeast and 1 tsp sugar in the mixing bowl and heat for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting

Put 400 g flour, 150 g sugar, 1 packet of vanilla sugar, 1 pinch of salt, 150 g soft butter in pieces, 1 egg and the prepared yeast-milk mixture in the mixing bowl and knead for 3 min./kneading stage to form a dough.

Let the dough rise

Transfer the dough to a bowl and let it rise, covered, in a warm place for about 1 hour, until the volume has doubled.

Prepare filling

Add 250 g raisins, 50 g candied lemon peel, 50 g candied orange peel, 50 ml rum and the chopped almonds to the dough. Knead well with your hands.

Shape stollen

Roll out the dough on a floured work surface to form an oval. Roll out one side a little thicker and place it over the other side to create the typical stollen shape. Place on a baking sheet lined with baking paper.

Bake stollen

Bake the stollen in a preheated oven at 180°C top/bottom heat for approx. 50-60 minutes.

Refine stollen

Brush the still warm stollen with 50 g melted butter and sprinkle with powdered sugar. Let cool completely.
