Description

This clafoutis with cherries and currants is a quintessential summer dessert. I love to prepare it with fresh cherries from the garden, but jarred cherries also work very well. Almond puree gives it a soft texture and a subtle taste that goes wonderfully with red fruits. It is a simple and quick dessert to make, perfect for a Sunday brunch or a gourmet snack. Complete brown sugar brings a delicious caramelized touch. A real treat for the taste buds, and so easy to make with the Thermomix®! You can also vary the fruits according to the season.

Ingredients (8 ingredients)

  • fresh or jarred cherries
  • currant berries
  • 2 piece small caps of natural vanilla extract
  • 3 tbsp almond puree
  • 25 cL milk
  • 60 g complete brown sugar
  • 80 g grey flour T 110
  • 3 piece eggs

Preparation (7 steps)

Preheat the oven

Preheat the oven to 180°C.

Beat the eggs and brown sugar

Thermomix® Setting
20 sec/Speed 4

In the Thermomix bowl, add the 3 eggs and 60g of complete brown sugar. Mix for 20 Sek./Stufe 4.

Add the liquid ingredients and flour

Thermomix® Setting
10 sec/Speed 3

Then add 25 cL of milk, 3 tablespoons of almond puree and 2 small caps of natural vanilla extract to the Thermomix bowl. Mix for 10 Sek./Stufe 3.

Incorporate the flour

Thermomix® Setting
15 sec/Speed 3

Add 80g of grey flour T 110 to the Thermomix bowl. Mix for 15 Sek./Stufe 3.

Prepare the gratin dish

Distribute the fresh or jarred cherries and currant berries in a gratin dish.

Pour the mixture over the fruits

Pour the Thermomix mixture over the cherries and currant berries in the gratin dish.

Bake in the oven

Bake the gratin dish for 30 Min. at 180°C. Remove from the oven when the clafoutis begins to brown.
