Description

This clafoutis with peaches and raspberries is a simple and delicious summer dessert, perfect for a Sunday brunch or a gourmet snack. I love the combination of the sweetness of the peaches and the acidity of the raspberries, all in a soft and slightly vanilla-flavored batter. Preparation is quick with the Thermomix®, and baking in the oven gives a golden and appetizing result. Ingredients (9 ingredients)

  • 60 g cornstarch
  • 1 packet vanilla sugar
  • 1 pinch salt or fine salt
  • 200 g fresh cream
  • 0.25 l milk
  • 200 g peach in syrup
  • 3 piece eggs
  • 125 g powdered sugar or granulated sugar
  • 20 g raspberries

Preparation (5 steps)

Preparation of fruits

Gently clean 20 g of raspberries. Cut 200 g of peaches in syrup into pieces. Butter a shallow dish of 25 centimeters in diameter suitable for oven.

Mixing dry ingredients

In the bowl of the Thermomix, pour 60 g of cornstarch, 125 g of powdered sugar, 1 sachet of vanilla sugar and 1 pinch of salt. Mix 10 Sek./Stufe 4.

Adding eggs and liquids

Add 3 eggs into the bowl of the Thermomix. Mix 20 Sek./Stufe 4.

Incorporation of milk and cream

Thermomix® Setting
30 sec/Speed 3

Gradually add ¼ l of milk and 200 g of fresh cream into the bowl of the Thermomix. Mix 30 Sek./Stufe 3, until a smooth batter is obtained.

Assembly and baking

Arrange the pieces of peaches in syrup and the raspberries in the bottom of the buttered dish. Pour the batter over the fruits. Bake in a preheated oven at 180°C for 15-20 minutes.
