Description

This Madrid stew is a traditional recipe that I have adapted to prepare with the Thermomix®. It is a hearty and perfect dish for cold winter days. The key is in the quality of the ingredients and in the cooking time, which allows the flavors to mix and intensify. The stew is served in three courses: first the soup, then the chickpeas and vegetables, and finally the meat. It is a complete culinary experience! In addition, the balls give it a special and different touch. Go ahead and prepare it, you will love it!

Ingredients (23 ingredients)

  • 75 g beef shin
  • 0.5 piece chicken
  • 1 kg chickpeas
  • 1 punta ham
  • 1 hueso ham
  • 150 g streaky bacon
  • 0.5 piece cabbage
  • 5 piece carrots
  • 5 piece potatoes
  • 1 piece onion
  • 2 clavos cloves
  • to taste salt
  • 2 chorizos chorizos
  • 2 morcillas de cebolla onion black puddings
  • 2 huesos beef with its marrow
  • 1 hueso the beef knuckle
  • 1 cucharón olive oil
  • 1 cucharón olive oil
  • 1 piece egg
  • 3 slice bread
  • 1 rama parsley
  • 1 clove garlic
  • 1 cucharón flour

Preparation (9 steps)

Soaking the chickpeas

The night before, put 1 kg of chickpeas in a large bowl with plenty of water to hydrate.

Preparation of the vegetables

Wash, clean and cut ½ cabbage to taste. Peel and wash 5 carrots and 5 potatoes, leaving them whole. Peel 1 onion and reserve.

Cleaning the meats

Clean 750 g of beef shin, ½ chicken, 1 ham hock, 1 ham bone, 150 g of streaky bacon, 2 chorizos, 2 onion black puddings, 2 beef bones with their marrow and 1 beef knuckle bone. Peel, wash and reserve the potatoes.

Initial meat cooking

Thermomix® Setting
20 min/Varoma/Velocidad 1 Varoma

Pour water into the Thermomix bowl up to the maximum mark. Add the beef shin, the ham hock, the ham bone, the streaky bacon, the beef bones with marrow and the beef knuckle bone. Program 20 min/Varoma/speed 1.

Add chickpeas and onion

Thermomix® Setting
60 min/Varoma/Velocidad 1 Varoma

Remove any foam that has formed on the surface. Add the drained chickpeas and the whole onion with 2 cloves pierced. Program 60 min/Varoma/speed 1.

Incorporate vegetables, chicken, chorizo and black pudding

Thermomix® Setting
30 min/Varoma/Velocidad 1 Varoma

Add the cabbage, carrots, potatoes, chicken, chorizos and onion black puddings to the bowl. Program 30 min/Varoma/speed 1.

Preparation of the balls

While the stew is cooking, prepare the balls. In a bowl, mix 1 tablespoon of olive oil, 1 egg, 3 slices of bread soaked in milk and drained, 1 sprig of chopped parsley, 1 clove of chopped garlic and 1 tablespoon of flour. Work the mixture until a homogeneous dough is obtained. Form small balls with the dough.

Cooking the balls

Thermomix® Setting

Add the balls to the Thermomix bowl. Program 30 min/Varoma/speed 1.

Serve the stew

Take broth from the bowl to prepare a soup. Serve the chickpeas, vegetables and meat separately.
