Description

This vibrant kohlrabi, kale, mushroom, and bean sauté is a delightful and healthy dish perfect for a quick weeknight meal. The kohlrabi adds a subtle sweetness and satisfying crunch, while the kale provides a hearty, earthy flavor. Ingredients (10 ingredients)

  • 2 tbsp extra-virgin olive oil
  • 2 clove garlic, minced
  • 0.25 tsp red pepper flakes
  • 1 bunch kale, stemmed and coarsely chopped
  • 1 cup chicken broth
  • 2 piece kohlrabi - peeled, halved, and sliced
  • 1 can cannellini beans, drained and rinsed
  • 12 ounce baby portobello mushrooms, sliced
  • salt
  • ground black pepper

Preparation (5 steps)

Prepare Garlic and Red Pepper Flakes

Add 2 cloves garlic to the mixing bowl and chop for 3 sec/Stufe 7. Add 2 tablespoons extra-virgin olive oil and ¼ teaspoon red pepper flakes and sauté for 3 min/120°C/Stufe 1.

Add Kale and Broth

Add 1 bunch kale, stemmed and coarsely chopped, and 1 cup chicken broth to the mixing bowl. Cook for 2 min/100°C/Stufe 1.

Add 2 kohlrabi, peeled, halved, and sliced, to the mixing bowl. Cook for 7 min/100°C/Stufe 1.

Add Beans and Mushrooms

Add 1 (15 ounce) can cannellini beans, drained and rinsed, and 12 ounces baby portobello mushrooms, sliced, to the mixing bowl. Cook for 7 min/100°C/Stufe 1.

Season with salt and ground black pepper to taste. Stir gently with a spatula to combine. Serve immediately.
