Description

This hearty Braised Hare in Red Wine Herb Sauce, prepared in the Thermomix®, is a festive main course with rabbit, onions, garlic and carrots. Preparation takes a total of 320 minutes, the active working time is about 60 minutes. The recipe is ideal for a hearty family meal or a festive Christmas menu. It yields 4 servings.

  • 1 Stück Rabbit (ready-to-cook, disjointed)
  • 4 EL Mustard
  • 1 Stück Onion
  • 2 Zehe(n) Garlic
  • 1 Stück Carrot
  • 0.5 Stange(n) Leek
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 EL Oil
  • 3 EL Tomato paste
  • 250 ml Red wine
  • 500 ml Meat broth
  • 2 Blätter Bay leaves
  • 2 TL Marjoram (dried)
  • 1 Prise(n) Sugar
  • 2 EL Freshly chopped parsley

Preparation (13 steps)

Prepare rabbit

Generously rub the ready-to-cook, disjointed rabbit pieces with 4 tablespoons of mustard. Leave to rest, covered, in the refrigerator for 2-3 hours.

Prepare vegetables

Peel 1 onion and 2 cloves of garlic. Peel 1 carrot and clean 0.5 stalk of leek.

Chop onion and garlic

Put the peeled onion in the mixing bowl and chop for 3 sec./speed 5. Add the garlic and chop for another 3 sec./speed 7.

Sauté vegetables

Add 2 tablespoons of oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop carrot and leek

Put the peeled carrot and the cleaned leek in the mixing bowl and chop for 5 sec./speed 4.

Add vegetables to sauté

Add the chopped vegetables to the onions and garlic in the mixing bowl and sauté for another 3 min./120°C/speed 1.

Add tomato paste

Add 3 tablespoons of tomato paste to the vegetables in the mixing bowl and sauté for 1 min./120°C/speed 1.

Pour in red wine and broth

Add 250 ml red wine and 500 ml meat broth to the mixing bowl. Add 2 bay leaves, 2 tsp marjoram (dried) and 1 pinch of sugar.

Simmer sauce

Simmer the sauce in the mixing bowl for 10 min./100°C/speed 1.

Sear rabbit

Salt and pepper the rabbit pieces. Heat the oil in a roasting pan and sear the meat vigorously on all sides. Preheat the oven to 160 °C top/bottom heat. Push the rabbit aside a little, add the vegetables from the mixing bowl and sauté briefly. Deglaze with the sauce from the mixing bowl.

Braise rabbit

Braise the rabbit roast in the oven for about 1 hour 30 minutes, covered.

Puree sauce (optional)

30 sec/Speed 8-10

When the meat is very tender and can be easily divided with a fork, take the roasting pan out of the oven and remove the bay leaves. Remove the meat pieces from the broth and keep warm. Put the broth in the mixing bowl and mix until creamy for 30 sec./speed 8-10. Season with salt and pepper.

Serve

Serve the rabbit with the sauce and sprinkled with 2 tablespoons of freshly chopped parsley. Potato dumplings, Schupfnudeln or simply crispy white bread are a good accompaniment.
