Description

This Confetti Layer Cake is a delightful treat that's perfect for birthdays or any celebration! I've been making this cake for years, and it always brings a smile to everyone's face. The soft, buttery cake layers are studded with colorful sprinkles, and the creamy frosting adds the perfect touch of sweetness. It's surprisingly easy to make with the Thermomix®, and the results are always impressive. This cake is sure to be a hit with kids and adults alike!   • Baking spray with flour
  • 2 cups white sugar
  • 1 cup unsalted butter, softened
  • 4 piece large eggs
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 0.75 cup multicolored sprinkles (jimmies)
  • 1 cup unsalted butter, softened
  • 6.5 cups powdered sugar
  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 0.5 cups sour cream
  • 0.25 cup multicolored sprinkles (jimmies)
  • additional multicolored sprinkles (jimmies) for garnish

Prepare Cake Pans

Preheat the oven to 175°C. Grease and flour three 8-inch round cake pans. Line the bottom of each pan with parchment paper.

Cream Sugar and Butter

Add 2 cups white sugar and 1 cup softened unsalted butter to the Thermomix bowl. Mix for 4 Min./Stufe 3 until light and fluffy.

Add Eggs

20 sec/Speed 2

Add 4 large eggs, one at a time, to the Thermomix bowl. Mix for 20 Sec./Stufe 2 after each addition until combined.

Combine Dry Ingredients

In a separate bowl, whisk together 3 cups all-purpose flour, 1 tablespoon baking powder, and 1 teaspoon kosher salt.

Add Flour and Milk

30 sec/Speed 2

Add the flour mixture to the butter mixture in 3 additions, alternating with 1 cup whole milk, beginning and ending with the flour mixture. Mix for 30 Sec./Stufe 2 after each addition until blended.

Add Vanilla and Sprinkles

20 sec/Speed 1

Add 1 teaspoon vanilla extract and ¾ cup multicolored sprinkles to the Thermomix bowl. Mix for 20 Sec./Stufe 1 until just combined.

Divide and Bake

Divide the batter evenly among the prepared pans, about 2 cups per pan. Bake in the preheated oven for 25 to 28 minutes, or until a wooden pick inserted in the center comes out clean.

Cool Cakes

Let cool in pans for 10 minutes. Invert onto a wire rack and let cool completely, about 30 minutes.

Prepare Frosting

2 min/Speed 3

Add 1 cup softened unsalted butter to the Thermomix bowl. Mix for 2 Min./Stufe 3 until creamy.

Add Powdered Sugar, Salt, and Vanilla

Thermomix® Setting
30 sec/Speed 1

Add 6 ½ cups powdered sugar, ½ teaspoon kosher salt, and 1 teaspoon vanilla extract to the Thermomix bowl. Mix for 30 Sec./Stufe 1 until combined.

Add Sour Cream

Thermomix® Setting
2 min/Speed 4

Add ½ cup sour cream to the Thermomix bowl. Mix for 2 Min./Stufe 4 until fluffy, scraping down sides as needed.

Stir in Sprinkles

Thermomix® Setting
10 sec/Speed 1

Add ¼ cup multicolored sprinkles to the Thermomix bowl. Mix for 10 Sec./Stufe 1 until just combined.

Assemble Cake

Place 1 cake layer on a plate; spread with about 3/4 cup frosting. Repeat cake and frosting layers one more time. Top with remaining cake layer. Spread remaining frosting over top and sides of cake. Garnish with additional multicolored sprinkles, if desired. Store cake loosely covered in the refrigerator.
