Description

I love processing fresh strawberries in the summer! This strawberry jam is an absolute classic and simply tastes wonderful on fresh bread rolls or croissants. Preparation with the Thermomix® is super easy and quick. In no time at all, you have a delicious supply for the whole year. The jam is perfect for a cozy breakfast or as a sweet side dish for afternoon tea. And the best thing: you know exactly what's in it! A great recipe that always goes down well with me.

Ingredients (3 ingredients)

  • 1000 g Strawberries
  • 500 g Gelling Sugar 2:1
  • 1 tbsp Lemon juice - freshly squeezed

Preparation (7 steps)

Prepare jars

Sterilize 6 screw-top jars (approx. 200ml capacity) and lids in the oven at 90°C circulating air for 30 minutes. Then allow to cool and have ready.

Prepare strawberries

Wash, trim and drain 1 kg strawberries well.

Chop strawberries

Thermomix® Setting
5 sec/Speed 5

Put the prepared strawberries into the mixing bowl and chop for 5 sec./speed 5. If necessary, scrape down from the edge with the spatula and repeat the process.

Add ingredients and cook

Thermomix® Setting
14 min/212°F/Speed 2 100

Add 1 tbsp lemon juice and 500 g Gelling Sugar 2:1 to the chopped strawberries in the mixing bowl. Cook for 14 min./100°C/speed 2 without a measuring cup.

Perform gel test

Place a small amount of the hot jam on a cold plate. If it sets, the jam is ready. If not, cook for another 2-3 minutes/100°C/speed 2.

Fill jam

Immediately fill the hot strawberry jam into the prepared, clean screw-top jars (up to approx. 4 mm below the rim). Close the jars immediately, turn them upside down and leave them like this for 5-10 minutes so that a vacuum forms. Caution, the jars are hot!

Cool and store

Turn the filled jars over and let them cool completely. Then store in a cool and dark place.
