Description

This chicken consommé is a real panacea, especially on cold days! I often prepare it when I need something hot and comforting. The recipe is very simple, but the result is a broth rich in flavor and nutritious. Perfect to enjoy as it is or as a base for soups and risottos. The secret lies in the slow cooking, which allows the chicken and vegetables to release all their aroma. Ideal for the whole family and lends itself very well to being frozen to always have it on hand. A timeless classic of Italian cuisine!

Ingredients (8 ingredients)

  • 1 kg chicken
  • 2 l water
  • 1 piece onions
  • 1 piece carrots
  • 1 coste celery
  • 0.5 bunch parsley
  • 0.25 pinch cloves
  • 0.25 q.b. fine salt

Preparation of the vegetables

Cut the onion in half and remove the peel. Insert the onion into the bowl and chop for 3 Sec./Level 5.

Cutting the carrots and celery

Peel the carrots and cut them into coarse pieces. Also cut the celery stalk into chunks. Add the carrots and celery to the bowl and chop for 3 Sec./Level 4.

Broth preparation

Arrange the chopped vegetables in the bowl. Add the parsley, chicken, cloves, water and salt. Close the bowl and cook for 135 Min./100°C/Level 1.

Filter the broth

Once ready, filter the broth through a fine-mesh sieve to remove residues and impurities.
