Description

This chicken noodle soup is a family favorite, especially during the colder months. I've been making it for years, and it's always a hit! Using rotisserie chicken makes it incredibly easy and flavorful. The broth is rich and comforting, and the noodles add a satisfying heartiness. It's perfect for a cozy night in or when you're feeling under the weather. This soup is also great for meal prepping – it tastes even better the next day! Feel free to add other vegetables like peas or green beans for extra nutrients.

Ingredients (14 ingredients)

  • 2 piece rotisserie chickens, with juices
  • 1 gallon water
  • 1.5 piece large onions, diced
  • 0.5 stick butter
  • 5 clove garlic, diced
  • 10 piece carrots, peeled and sliced
  • 5 stalk celery, diced
  • 3 can whole kernel corn, drained (15.25 ounce)
  • 0.25 cup dried parsley
  • 2 tablespoon dried oregano
  • 1 pinch freshly ground black pepper to taste
  • 0.5 pound flat whole wheat noodles
  • 0.5 cup cold water
  • 2 tablespoon cornstarch

Preparation (8 steps)

Prepare the Chicken

Remove the meat from 2 rotisserie chickens, discarding the bones and skin. Cut the chicken into small, bite-sized pieces and set aside. Reserve the juices from the chicken.

Sauté Onions and Garlic

Dice 1 ½ large onions and add them to the Thermomix bowl. Add ½ stick of butter. Cook for 3 Min./120°C/Stufe 1.

Add Garlic, Carrots, and Celery

Add 5 cloves of diced garlic to the Thermomix bowl and cook for 1 Min./120°C/Stufe 1. Then add 10 peeled and sliced carrots and 5 diced stalks of celery. Cook for 5 Min./120°C/Stufe 1.

Add Corn, Parsley, and Pepper

Add 3 (15.25 ounce) cans of drained whole kernel corn, ¼ cup of dried parsley, and a pinch of freshly ground black pepper to the Thermomix bowl. Stir with the spatula.

Add Chicken Stock and Cook

Add 1 gallon of water (or enough to cover the vegetables) and the reserved chicken juices to the Thermomix bowl. Cook for 15 Min./100°C/Stufe 1.

Add Noodles and Cook

Add ½ pound of flat whole wheat noodles to the Thermomix bowl. Cook for 6 Min./100°C/Linkslauf Stufe 1.

Thicken the Soup

2 min/212°F/Linkslauf Speed 1 100 Reverse

In a small bowl, mix ½ cup of cold water with 2 tablespoons of cornstarch to create a slurry. With the Thermomix running at 2 Min./100°C/Linkslauf Stufe 1, slowly pour the cornstarch slurry into the Thermomix bowl to thicken the soup.

Add Chicken and Heat Through

5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the cooked chicken pieces to the Thermomix bowl. Cook for 5 Min./100°C/Linkslauf Stufe 1 to heat the chicken through.
