Description

These stuffed pork cutlets are a hearty and satisfying dish that is prepared in the oven. The juicy pork loin steaks are filled with ham and cheese and then breaded until crispy. I like to make this dish when I want to cook something special for my family. The preparation is a bit more complex, but the result is worth it. It tastes especially good with a fresh side dish such as salad or vegetables. A real classic that is always well received!

Ingredients (10 ingredients)

  • 4 piece Pork Loin Steaks with Pocket
  • 4 slice Cooked Ham
  • 4 slice Cheese - Emmental or Gruyere
  • 2 piece Eggs
  • 80 g Breadcrumbs
  • 50 g Butter
  • 40 g Flour
  • 0.125 tsp Paprika powder
  • Salt
  • Pepper

Preparation (10 steps)

Preheat oven

Preheat the oven to 220 °C top and bottom heat in good time.

Prepare meat pockets

If you want / have to cut the pockets for the Cordon Bleu yourself, place a pork loin steak on a cutting board. Use a long knife to first cut a 5 cm long slit in the meat on one side. Then place your free hand on the piece of meat and carefully cut a deep pocket into it. Keep the knife as parallel to the surface as possible.

Flatten meat

Place cling film around each pork loin steak before each flattening. Use a flattening iron or a small saucepan or frying pan for this.

Season meat

Then season with salt and pepper on both sides.

Prepare filling

For the filling, fold the 4 slices of cheese 2 x and wrap them with one slice of cooked ham each like a package. Place a ham and cheese package in each pocket of your pork loin steak and close the pocket with a toothpick or roulade needle.

Make breadcrumbs

Thermomix® Setting
5 sec/Speed 8

Put 80 g breadcrumbs into the mixing bowl and chop for 5 sec./speed 8 if you want to make it yourself.

Prepare breading station

Set up a breading station consisting of 40 g flour, 2 beaten eggs and 80 g breadcrumbs. Bread the Cordon Bleu in it one after the other and press the breading down lightly.

Melt butter

Melt 50 g butter in a large, ovenproof pan on the stove over low heat.

Prepare Cordon Bleu

Place the breaded Cordon Bleu in the pan one after the other and brush the top with the butter. Season only the top with about 1/8 tsp paprika powder per cutlet.

Bake Cordon Bleu

Slide the grill rack onto the lowest shelf in the preheated oven, place the pan with the Cordon Bleus on it and bake in the preheated oven for approx. 20-23 minutes. The meat is cooked when the cheese starts to run out.
