Description

This creamy chicken risotto is a comforting and tasty dish, perfect for a family dinner or a lunch with friends. I often prepare it because it is simple to make and always appreciated. Arborio rice, with its creamy texture, goes wonderfully with tender chicken and melting parmesan. A little fresh parsley adds a touch of freshness to this gourmet dish. Feel free to add other vegetables like mushrooms or peas to vary the pleasures. This risotto is an excellent way to enjoy a complete and balanced meal in a single dish. A true delight!

Ingredients (11 ingredients)

  • 2 piece Chicken fillet
  • 1 piece Onion
  • 10 cl White wine
  • 250 g Arborio rice
  • 650 ml Water
  • 10 cl Liquid fresh cream
  • 50 g Parmesan
  • 1 c. à soupe Olive oil
  • to taste Parsley
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Preparation of the chicken and onion

Cut the chicken fillets into medium-sized pieces. Peel the onion and cut it in half. Put the onion in the Thermomix bowl and chop it for 3 Sec./Level 5.

Cooking the chicken and rice

3 min/248°F/Speed 1 120

Add the olive oil to the Thermomix bowl and sauté the onion and chicken for 3 Min./120°C/Level 1. Then add the Arborio rice and cook for 2 Min./120°C/Level 1.

Deglaze with white wine

Thermomix® Setting
2 min/212°F/Speed 1 100

Pour the white wine into the Thermomix bowl and let it reduce for 2 Min./100°C/Level 1 without the measuring cup.

Cooking the risotto

15 min/212°F/Linkslauf Speed 1 100 Reverse

Add the water, salt and pepper to the Thermomix bowl. Program the cooking for 15 Min./100°C/Reverse rotation Level 1.

Finalizing the risotto

2 min/140°F/Linkslauf Gentle stir speed 60 Reverse

At the end of cooking, add the liquid fresh cream and grated parmesan to the Thermomix bowl. Mix gently for 2 Min./60°C/Reverse rotation Gentle stir setting.

Sprinkle with chopped fresh parsley and serve immediately.
