Description

This creamy chicken dish is a family favorite, especially during the cooler months. The combination of tender chicken, earthy mushrooms, and a hint of sherry creates a rich and comforting flavor that's hard to resist. I've been making this recipe for years, and it's always a hit! It's perfect served over rice or pasta for a satisfying meal. The fresh thyme and parsley add a bright, herbaceous note that balances the richness of the cream. This dish is also great for using up leftover roasted chicken.

Ingredients (16 ingredients)

  • 6 tbsp unsalted butter
  • 0.5 pound sliced mushrooms
  • 2 piece large shallots, minced
  • 1 cup diced sweet bell peppers
  • Salt
  • freshly ground black pepper
  • 0.33333333333333 cup all-purpose flour
  • 0.25 cup dry sherry
  • 3.5 cup chicken stock or broth
  • 1 pinch freshly grated nutmeg
  • 1 pinch cayenne pepper
  • 2 teaspoon fresh thyme
  • 1 tablespoon chopped fresh Italian parsley
  • 0.33333333333333 cup creme fraiche or heavy cream
  • 4 cup cubed roasted chicken
  • Chopped fresh chives for garnish

Preparation (5 steps)

Sauté Mushrooms and Shallots

Add 6 tablespoons of unsalted butter to the mixing bowl and melt for 3 Min./100°C/Stufe 1. Add ½ pound of sliced mushrooms and salt to taste and sauté for 8 Min./100°C/Stufe 1. Add 2 large shallots, minced, and cook for 3 Min./100°C/Stufe 1.

Add 1 cup of diced sweet bell peppers and cook for 1 Min./100°C/Stufe 1. Add ⅓ cup of all-purpose flour and cook for 5 Min./100°C/Stufe 1.

Deglaze with Sherry and Add Stock

Pour in ¼ cup of dry sherry and cook for 30 Sec./100°C/Stufe 1. Add 3 ½ cups of chicken stock or broth and cook for 15 Min./100°C/Stufe 1.

Add 1 pinch of freshly grated nutmeg, 1 pinch of cayenne pepper, 2 teaspoons of fresh thyme, 1 tablespoon of chopped fresh Italian parsley, and ⅓ cup of creme fraiche or heavy cream. Cook for 5 Min./90°C/Stufe 1.

Add 4 cups of cubed roasted chicken and cook for 3 Min./90°C/Linkslauf Stufe 1. Season with salt and freshly ground black pepper to taste.
