Description

This creamy potato casserole is a family favorite! I've been making it for years, and it's always a hit at potlucks and holiday gatherings. The combination of tender potatoes, a rich cream of chicken soup and sour cream sauce, and a crunchy cornflake topping is simply irresistible. It's a hearty and comforting dish that's perfect for a chilly evening. Feel free to add a pinch of nutmeg to the sauce for an extra layer of flavor. This casserole is also great for using up leftover cooked potatoes!

Ingredients (7 ingredients)

  • 8 piece Idaho or russet potatoes, peeled
  • 2 can cream of chicken soup (10.5 ounce)
  • 2 cup sour cream
  • 1 cup chopped green onions
  • 0.75 cup unsalted butter, melted, divided
  • 2.5 cup shredded Cheddar cheese
  • 1 cup crushed corn flakes, or more if needed

Prepare the Potatoes

Peel 8 Idaho or russet potatoes and place them in the Thermomix. Add enough water to cover the potatoes. Cook for 20 Min./100°C/Stufe 1. Check if the potatoes are tender but not mushy. Drain the potatoes and let them cool slightly. Cut the potatoes into 1-inch thick slices.

Prepare the Cream Sauce

Add 2 (10.5 ounce) cans of cream of chicken soup, 2 cups of sour cream, and 1 cup of chopped green onions to the Thermomix. Mix for 20 Sek./Stufe 3. Add 2 cups of shredded Cheddar cheese and mix for 10 Sek./Stufe 3. Add 1/2 cup of melted unsalted butter and mix for 5 Sek./Stufe 3.

Prepare the Cornflake Topping

Add 1 cup of crushed corn flakes and the remaining 1/4 cup of melted unsalted butter to the Thermomix. Mix for 5 Sek./Stufe 3.

Assemble the Casserole

Preheat the oven to 350 degrees F (175 degrees C). Spread a thin layer of the cream sauce in the bottom of a 9x13-inch glass baking dish. Layer potato slices over the sauce, followed by a thick layer of sauce. Continue layering, ending with sauce. Sprinkle the corn flake mixture evenly over the top of the casserole.

Bake the Casserole

Bake in the preheated oven for about 45 minutes, or until the casserole is bubbling and the topping is crisp.
