Description

This cinnamon cream with spiced pears is a festive dessert from the Thermomix® with eggs, cream, sugar, cinnamon and pears. The preparation takes a total of 290 minutes, the active working time is about 45 minutes for 6 servings. The recipe is ideal as a winter dessert or for a Christmas menu. The spiced pears give the creamy ice cream variant a special touch.

Ingredients (13 ingredients)

  • 2 Stück Eggs
  • 100 g Sugar
  • 250 ml Cream
  • 1 TL Cinnamon
  • 2 Stück Pears
  • 1 Stück Vanilla pod
  • 3 Stück Cardamom pods
  • 3 Stück Star anise
  • 150 ml Dry red wine
  • 150 ml Port wine
  • 150 ml Red currant juice
  • 1 Stück Lemon
  • 150 ml Water

Preparation (10 steps)

Whisk egg yolks and sugar

Separate 2 eggs. Add the egg yolks and 100 g of sugar to the mixing bowl and whisk until light yellow for 3 minutes/speed 4.

Whip the cream until stiff

Insert the butterfly. Add 250 ml cream and 1 teaspoon cinnamon to the mixing bowl and whip until stiff for 2 minutes/speed 3.5. Remove butterfly.

Mix egg yolk-sugar mixture and cream

Carefully fold the whipped cream into the egg yolk-sugar mixture and mix well.

Freeze parfait

Pour the mixture into a loaf pan or terrine, smooth it out and cover with aluminum foil or a lid. Then place in the freezer for 4 hours.

Prepare pears

Peel and halve 2 pears, without removing the stem. Wash the lemon in hot water and grate the zest. Squeeze the lemon juice.

Prepare spices

Scrape out 1 vanilla pod. Lightly crush 3 cardamom pods.

Add vanilla pulp and the scraped pod, 3 cardamom pods, 3 star anise, 150 ml dry red wine, 150 ml port wine, 150 ml red currant juice, lemon zest, lemon juice and 150 ml water to the mixing bowl and simmer for 15 minutes/100°C/speed 1.

Cook the pears

15 min/212°F/Linkslauf Speed 1 100 Reverse

Add the halved pears to the mixing bowl and simmer gently for 15 minutes/100°C/Reverse speed speed 1 until soft.

Reduce stock

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Carefully remove the pears from the mixing bowl and set aside. Let the stock reduce for another 10 minutes/Varoma/speed 1 without the measuring cup.

Serving

Remove the parfait from the freezer 5-8 minutes before serving, turn it out and cut into slices. Serve with the warm port wine pears and syrup.
