Description

This rhubarb cream from the Thermomix® is a spring-like dessert with rhubarb, sugar, cinnamon and eggs. The preparation takes about 60 minutes, of which 30 minutes are active working time. The recipe is ideal as a sweet dessert and can be easily prepared with the WunderSlicer V2 or Patix from Meistermix. The portion size is variably adjustable.

Ingredients (4 ingredients)

  • 1200 g Rhubarb
  • 300 g Sugar
  • Cinnamon
  • 3 Stück Eggs

Preparation (8 steps)

Prepare rhubarb

Wash 1200 g rhubarb and cut into small pieces with the Wundermix WunderSlicer V2. Place the WunderSlicer V2 on the mixing bowl lid and select the fine disc. Place the sliced rhubarb in a bowl.

Cook rhubarb

Put 200 g sugar into the mixing bowl and cook for 3 Min./100°C/speed 1.

Strain rhubarb

Remove the cooked rhubarb from the mixing bowl with a slotted spoon and strain through a sieve. Collect the rhubarb puree and set aside.

Prepare egg yolks

Put the remaining sugar (100 g), some cinnamon and 3 egg yolks into the mixing bowl and whisk for 2 Min./speed 3 until fluffy.

Stir in rhubarb

Add the cooled rhubarb puree to the egg yolk mixture in the mixing bowl and stir in for 10 sec./speed 2.

Beat egg whites

Thermomix® Setting
3 min/Speed 3.5

Put 3 egg whites into the mixing bowl. Insert the butterfly and beat for 3 Min./speed 3.5 until stiff.

Fold in egg whites

Thermomix® Setting

Carefully fold the stiff egg whites into the rhubarb mixture in the mixing bowl. Reverse speed 1

Serve

Fill the rhubarb cream into bowls and serve with whipped cream.
