Description

This caramel cream with salted butter is a real treat for anyone who loves sweet and salty at the same time. I especially like to make it when I have guests because it can be prepared well in advance and is always well received. The combination of the creamy caramel and the slightly salty butter is simply irresistible. Perfect as a dessert after a festive meal or just for a special moment. The preparation takes a little time, but the result is worth it! Be sure to try it!

Ingredients (4 ingredients)

  • 400 ml Milk
  • 150 g Sugar
  • 30 g Salted butter
  • 4 piece Egg yolks (size M)

Heat milk

Put 400 ml milk into the mixing bowl and heat for 5 mins/90°C/speed 1.

Caramelize sugar

Caramelize 120 g sugar in a pan until golden brown. Remove from the heat and stir in 30 g salted butter in pieces. Pour in the hot milk in a thin stream and stir until everything is dissolved.

Whisk egg yolks

Put 4 egg yolks and 30 g sugar into the mixing bowl and mix for 2 mins/speed 3.

Add caramel milk

Thermomix® Setting

Gradually pour the caramel milk into the mixing bowl with the egg yolks while stirring and mix for 30 sec/speed 2.

Distribute cream

Divide the cream into four ovenproof ramekins (each with a capacity of approx. 150 ml).

Prepare water bath

Place the ramekins in a baking dish and pour in hot water so that the ramekins are half submerged in the water.

Bake Crème Caramel

Place the baking dish in the preheated oven (electric oven: 180 °C/fan oven: 160 °C) and let the crème caramel set for approx. 30 minutes.

Cool and chill

Remove the crème caramel from the oven, let it cool and then place it in the refrigerator for at least 3 hours.
