Description

This creamy potato soup with smoked trout and caviar is a real treat! I especially like to make it when it's cold outside. The combination of the warm, creamy soup, the tender fish and the salty caviar is simply unbeatable. The preparation is a bit more complex, but it's worth it! Perfect as a festive appetizer or light main course. If you like, you can add a dash of lemon juice to bring out the flavors even better. A recipe that is always well received by my guests!

Ingredients (15 ingredients)

  • 1 piece Onion
  • 1 piece Carrot
  • 200 g Celeriac
  • 600 g Potatoes
  • 2 tbsp Oil
  • 1 l Poultry stock or chicken broth (instant)
  • 2 piece Trout fillets
  • 1 bunch Chives
  • 200 g Whipping cream
  • 100 g Whipping cream
  • Salt
  • Pepper
  • Nutmeg
  • 2 tbsp Lemon juice
  • 100 g Trout caviar

Preparation (10 steps)

Prepare vegetables

Peel and quarter the onion. Peel, wash and cut the carrot, celery and potatoes into coarse pieces.

Chop onion

Put the onion pieces into the mixing bowl and chop for 3 seconds/level 5. If necessary, slide down with the spatula.

Sauté vegetables

Add 2 tbsp oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add vegetables and potatoes

Add carrot, celery and potatoes to the mixing bowl and chop for 5 seconds/level 4.

Cook soup

20 min/212°F/Speed 1 100

Add 1 l poultry stock or chicken broth (instant) to the mixing bowl and cook for 20 min./100°C/level 1.

Puree soup

Add 200 g whipping cream to the mixing bowl and puree for 30 seconds/level 8. Puree for longer if necessary until the desired consistency is reached.

Season soup

Season the soup with salt, pepper, nutmeg and possibly 2 tbsp lemon juice and stir for 5 seconds/level 3.

Whip cream until stiff

Thermomix® Setting

Add 100 g whipping cream and the butterfly to the mixing bowl and whip until stiff for 2 min./level 3.5. Transfer the cream.

Prepare trout and chives

Cut the trout fillets into bite-sized pieces. Wash the chives, pat dry and cut into fine rolls.

Arrange

Arrange the potato soup in deep plates. Distribute a dab of whipped cream on the soup in a spiral shape. Garnish with trout and caviar. Sprinkle chives on top and serve immediately.
