Description

This creamy butternut squash soup from the Thermomix® is a vegetarian dish with squash, onions and vegetable broth. Preparation takes about 50 minutes and yields 6 servings. Ideal as a seasonal appetizer or light main course in autumn. Perfect for simple, vegetarian cuisine.

  • 1000 g Butternut Squash
  • 2 Stück Onions
  • 2 EL Butter
  • 800 ml Vegetable Broth
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Nutmeg

Preparation (7 steps)

Prepare Squash

Halve 1 kg of butternut squash and remove the squash seeds with a spoon. Peel the squash and cut into approx. 2-3 cm cubes. Set aside the prepared squash cubes.

Chop Onions

Peel and quarter 2 onions and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté Onions

Add 2 tbsp of butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and Sauté Squash

Add the prepared squash cubes to the onions in the mixing bowl and sauté for 2 min./120°C/speed 1. If necessary, use the spatula to push everything down from the edge.

Cook Soup

Add 800 ml of vegetable broth to the mixing bowl and simmer for 20 min./100°C/speed 1 with the lid on.

Puree Soup

Puree the soup for 30 sec./speed 10. Hold the measuring cup in place.

Season the pumpkin soup with salt, pepper and nutmeg to taste and stir for 10 sec./speed 3 reverse.
