Description

This creamy salmon soup is an absolute highlight on warm days! With fresh dill and tender salmon fillet cubes, it is not only incredibly delicious, but also quick and easy to prepare. I especially like to make it when it's warm outside and I want something light but still filling. The potatoes and leek make the soup nice and creamy, while the dill adds a fresh note. Perfect for a quick lunch or a light dinner! And the best part: it's ready in a flash in the Thermomix®.

Ingredients (7 ingredients)

  • 3 piece large Potato(es)
  • 1 Stange(n) Leek
  • 2 tbsp Butter
  • 0.75 Liter Vegetable broth
  • 200 g Salmon fillet(s)
  • 100 ml Cream
  • 3 tbsp Dill chopped

Preparation (6 steps)

Prepare potatoes and leek

Wash, peel and dice the potatoes. Wash the leek and cut into rings. Set both aside.

Sauté vegetables

Put the butter in the mixing bowl and melt for 2 min./120°C/speed 1. Add potatoes and leek and sauté for 3 min./120°C/speed 1.

Cook soup

Add the vegetable broth to the mixing bowl and cook for 15 min./100°C/speed 1.

Puree soup

Thermomix® Setting
5 sec/Speed 5

Puree the soup for 5 sec./speed 5. If necessary, use the spatula to help.

Add salmon

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Cut the salmon into bite-sized cubes, add to the mixing bowl and let steep for 5 min./90°C/reverse rotation speed 1.

Refine and serve soup

Thermomix® Setting
1 min/176°F/Linkslauf Speed 1 80 Reverse

Add the cream to the mixing bowl and stir in for 1 min./80°C/reverse rotation speed 1. Sprinkle with chopped dill and serve hot.
