Description

This creamy chicken risotto with mushrooms is an absolute delight! I always like to make it because it is so easy to prepare and the whole family loves it. The Arborio rice becomes wonderfully creamy thanks to the poultry stock and perfectly absorbs the flavors of chicken and mushrooms. The grated parmesan provides an additional flavor note and rounds off the dish. Ideal for a cozy dinner or a festive lunch. A truly delicious and satisfying dish that you just have to love! Try it out, you won't regret it!

Ingredients (9 ingredients)

  • 200 g Arborio risotto rice
  • 200 g Chicken breasts
  • 120 g Paris mushrooms
  • 60 cl Poultry stock
  • 40 g Grated parmesan
  • 2 piece Shallots (large)
  • 1 c. à c. Olive oil
  • 1 pinch Salt or fine salt
  • 1 pinch Pepper

Preparation (9 steps)

Chop shallots

Thermomix® Setting

Peel and halve the shallots and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté shallots

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the olive oil to the shallots in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add rice

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the risotto rice (Arborio) to the mixing bowl and sauté for 3 min./120°C/speed 1 without reverse rotation.

Prepare mushrooms

Clean the mushrooms and slice them. Set aside.

Prepare chicken

Cut the chicken breast fillets into bite-sized pieces. Fry in a pan with a little oil and set aside.

Cook risotto

Thermomix® Setting
20 min/212°F/Gentle stir speed 100 Reverse

Add the poultry stock, salt and pepper to the mixing bowl. Cook for 20 min./100°C/gentle stir setting/reverse rotation. Add the mushrooms after half the time.

Add chicken

5 min/212°F/Gentle stir speed 100 Reverse

Add the fried chicken pieces to the mixing bowl and cook for 5 min./100°C/gentle stir setting/reverse rotation.

Mix in parmesan

Thermomix® Setting
1 min/Speed 2 Reverse

Add the grated Parmesan to the mixing bowl and stir in for 1 min./speed 2/reverse rotation.

Serve the chicken risotto with mushrooms immediately.
