Description

These soya milk crêpes are a light and delicious alternative to traditional crêpes. I often prepare them for Sunday brunch, and they always disappear in the blink of an eye! The batter is incredibly easy to make with the Thermomix®, and the result is always perfect. They are ideal for people who are lactose intolerant or who are looking for a vegan option. Serve them with your favourite toppings: fresh fruit, jam, melted chocolate… The possibilities are endless! A real treat for the whole family.

Ingredients (4 ingredients)

  • 250 g of flour
  • 500 ml of soya milk
  • 3 piece eggs (large)
  • 1 pinch of salt or fine salt

Preparation of the crêpe batter

Thermomix® Setting
20 sec/Speed 4

Put 250 g of flour in the Thermomix bowl. Add 3 eggs (large), 1 pinch of salt or fine salt and 500 ml of soya milk. Mix 20 Sec./Stufe 4, until the mixture is smooth and creamy.

Resting the batter

Let the batter rest for at least 30 minutes at room temperature. This allows the gluten to relax, which leads to more tender crêpes.

Adjusting the consistency

Thermomix® Setting
5 sec/Speed 2

If the batter has thickened too much after resting, add a little soya milk or water to obtain a fluid consistency. Mix 5 Sek./Stufe 2, to incorporate the liquid.

Cooking the crêpes

Heat a non-stick frying pan over medium heat. Pour a ladle of batter into the hot pan and cook for about 2 minutes on each side, or until the crêpe is golden. Repeat the process with the remaining batter. Serve hot.
